Instant Pancit Canton Rice Balls

A new way to enjoy instant pancit canton is to make these Instant Pancit Canton Rice Balls.

We, Filipinos, love instant noodles a lot. It saves us from hunger whenever we don’t have much time to prepare our food. Personally, I enjoy it with white rice and fried egg on the side – yum! I also love to eat it with bread or even as is. I used Lucky Me! Pancit Canton in making these rice balls.

Although eating pancit canton in the usual instant way (eating right away after cooking) is the quickest answer to that hunger, there are times that I want to try other ways to enjoy it. Have you seen this Lucky Me! Pancit Canton Fried Rice I made? Ahhhh, that was amazing, too. This time, I made rice balls with pancit canton.

Whenever I hear “rice balls”, the first thing that comes to mind: rice balls with rice vinegar, sesame oil and furikake. In this version of rice balls, I didn’t want the pancit canton to lose its flavor so I didn’t add sesame oil and rice vinegar. I used all the pancit canton seasoning in the packet, and I added a bit of soy sauce and calamansi juice to enhance the flavor. Why calamansi? Because I used a calamansi-flavored pancit canton.

IS IT OKAY TO USE ANY BRAND OR FLAVOR OF PANCIT CANTON TO MAKE THESE RICE BALLS?

You can use any flavor or brand of instant pancit canton/fried noodles. It also depends on you if you want to add something to enhance its flavor in addition to its seasoning packets.

I had fun making these Instant Pancit Canton Rice Balls. Additionally, they’re delicious, too. I didn’t add a lot of Kewpie mayo and Sriracha so I don’t lose the flavor of the pancit canton.

NOTES:

  • You can use any brand/flavor or pancit canton.
  • Calamansi juice and soy sauce are optional but they enhance the flavor since I used calamansi-flavored pancit canton.
  • The rice balls are perfect (for me) when they’re topped with kewpie, sriracha and more furikake. I already kept the camera after adding Sriracha on top that’s why it’s not seen in the photos.
  • If you want to keep the flavor of the pancit canton in the rice balls, don’t overdo the kewpie and sriracha.
  • It depends on you how big or small your rice balls you want to be. Each rice ball is about ¼ cup and I made 9 rice balls.
  • I used Jasmine rice. Any fluffy rice will do or you can use sushi rice.

Instant Pancit Canton Rice Balls

A new way to enjoy instant pancit canton is to make these Lucky Me! Pancit Canton Rice Balls.

Ingredients

  • Cooking oil
  • 2 tbsp chopped carrots
  • 2 tbsp sliced spring onions
  • 1 egg
  • 1 Lucky Me! Pancit Canton or any brand/flavor of instant pancit canton you prefer
  • 1 tsp soy sauce
  • 1 tbsp calamansi juice
  • 1 ½ cup cooked white rice or sushi rice see notes
  • 3 tbsp furikake
  • Kewpie for topping
  • Sriracha for topping
  • Furikake for topping

Instructions

  1. In a pan over medium-high heat, add cooking oil. Add carrots and spring onions; cook for a minute.
  2. Add egg and scramble until well done. Set aside.
  3. Boil water in a pot. Crush the noodles into smaller pieces. Remove the seasoning from the packet and add the noodles to the boiling water. When the noodles are cooked, drain and set aside.
  4. In a bowl, add seasoning from the noodle packet. Add calamansi juice and soy sauce. Mix everything. Add the cooked and drained noodles; mix very well.
  5. Mix the rice, cooked egg, and furikake with the bowl with the noodles.
  6. Take about ¼ cup and shape into balls. (see notes)
  7. Top with Kewpie mayo, more furikake and Sriracha. Enjoy immediately.

Recipe Notes
