Salted Egg and Tinapa Fried Rice

And I am back with another fried rice recipe. This time, it’s Salted Egg and Tinapa Fried Rice.

If there’s one thing I could on a daily basis, it would be fried rice. In variations, of course – Crab Paste Fried Rice, Pancit Canton Fried Rice – you name it.

This is a fried rice dish that is made up of salted egg, gourmet tinapa and your choice of veggies. Gourmet Tinapa is tasty enough so I didn’t have to add a lot of seasoning sauces or granules.

Gourmet Tinapa is made up of smoked fish fillets sautéed in different aromatics and in salted egg sauce. I don’t know if all gourmet tinapa is in salted egg sauce, but the one I am using in this dish from MichMari is.

I really enjoyed this dish and ate this for 3 consecutive days for my lunch. It was so good especially when you have coffee with creamer to drink with it, and also slices of cucumbers and tomatoes. Yum!!

NOTES ON SALTED EGG AND TINAPA FRIED RICE:

  • Don’t add a lot of gourmet tinapa oil unless you want oily fried rice.
  • You can add your choice of mixed veggies.

  • 2 beaten eggs
  • 3 cloves garlic chopped
  • Choice of mixed veggies
  • 2-3 cups of day old rice
  • Gourmet tinapa
  • 2 salted eggs chopped
  • Spring onions sliced
  • Salt & pepper to taste

Instructions

  1. In a pan over medium-high heat, add cooking oil.
  2. When the oil is hot enough, add eggs and cook according to your liking. Remove the cooked eggs from the pan, transfer to a plate and set aside.
  3. Using the same pan, add more cooking oil. Add garlic and cook until fragrant.
  4. Add choice of mixed veggies and cook until soft.
  5. Next, add gourmet tinapa as much as you want but don’t add too much gourmet tinapa oil. Break down the tinapa into smaller pieces. Also add chopped salted eggs at this point.
  6. Add day old rice and mix until rice is warm and soft.
  7. Finish it off with sliced spring onions and by seasoning with salt and pepper.

Recipe Notes

  • Don’t add a lot of gourmet tinapa oil unless you want oily fried rice.
  • You can add your choice of mixed veggies.
