Brownie Mix Cookies
I had a box of brownie mix that I wanted to use. Sooo, what to make aside from brownies?? Well, next to brownies, I love cookies. Or maybe cake? Or cheesecake? Anyway, I LOVE COOKIES! There is something about cookies, if baked divinely, that makes them so comforting.
I never wanted to make cookies or cake from the boxed mixes you get from the store. I always tell myself that I don’t need to coz I can do the mixture by myself and I always have the basic ingredients on hand. But sometimes, you just want to do something that’s quick and very easy. Also, I never knew that you could use them on other recipes like making cookies out of cake mix or brownie mix.🙄
Brownie mix cookies. What do you think of them? Maybe you’d say ‘Nah! I’ll pass.’ Ha! Yes, maybe you’ll pass out after consuming a lot.😂 These cookies are incredibly divine you’d want the whole recipe for yourself.
The cookies are so fudgy, rich and full of chocolate goodness. The white chocolate chunks are perfect for the not-too-sweet cookies. The edges are crisp. I tell you – you’ll love these! And oh, this has coffee, too.😉
I was told by my friend that they looked like the cookies from a famous fast food restaurant. I felt happy. But when she told me that these cookies taste waaaay better, I did a mental happy dance. She even said that these are the best cookies she has ever tasted. Her husband said the same thing. On the first bite, their eyes widened and were like, “Oh man! These are amazing!!”
My BFF, who is not a huge fan of cookies, also loved the cookies. She rarely gives me feedback, but the time she tasted the cookies and said “yummmmeeeyyy”, I did a mental happy dance again. Just imagine how happy I was, knowing all of them LOVED the cookies!
The dough? I ate more than a tablespoon! Yes, it’s not edible – fresh egg, duh! But it is sooooo good I couldn’t help myself.
Ahhhh! I hope I could tell you more, but you really have to make these!! And then, we can talk about our feelings later.😅
Just quick info – I used Betty Crocker’s brownie mix with chocolate chunks and for the instant coffee mix, I used Kopiko. Of course, you can use any strong coffee mix you love.

Brownie Mix Cookies
Ingredients
- 105 g (½ cup) unsalted butter softened to room temperature
- 1 egg
- 1 packet instant coffee dissolved in 2 tbps water
- 1 tbsp vegetable or canola oil
- ½ tsp vanilla extract
- 1 box brownie mix
- 150 g white chocolate chunks or chips
Instructions

In a bowl, beat butter until fluffy (about 3 minutes).

Add egg, coffee mixture, oil and vanilla. Mix until well combined.

Gradually add the brownie mix and mix until well incorporated.

Add in chocolate chunks/chips and mix again.

Place in the fridge for 30 minutes to firm up or up to overnight.

When dough is ready, preheat your oven to 350 F. Prepare baking sheets lined with parchment paper.

Scoop out about 1 & 1/2 tbsp of the dough and form into balls. (I used my ice cream scooper.) Place on the prepared baking sheet, leaving about 2 inches apart.

Bake for 10-12 minutes or until edges are firm and crisp, but middle is little soft. Remove from the oven and leave on the pan for 5 minutes, then transfer to a cooling rack to cool further. The cookies will continue to cook as they cool down.
Recipe Notes
- Ovens differ from each other; watch your cookies closely.
- If your cookies are not done even on the 12-minute mark, you can add more time while checking every after one minute.
- These can be kept up to 4 days in an airtight container.

I sooooooo love soft baked cookies. Specially those cookies that has crunchiness on the outside but soft in the inside. One question though, can I use dark chocolates instead of the coffee? Thank you for sharing this recipe. The photos looks yummy.

Hello! 🙂 Hmm, I think you can replace it with instant chocolate mix or you can omit the coffee if you don’t like coffee in your cookies. You really don’t taste the coffee here, but I think it enhances the chocolate flavor. I know, right?? I think the chilling time is the most torturing part of the recipe. Haha! The best thing we can do is chill the dough overnight so we can bake them in the morning when we wake up (that is if we ever sleep at night!!). Thanks a lot for the visit – I really appreciate it.
