Tortang Sardinas

Tortang Sardinas or Sardines Omelette is one of my favorite ways to enjoy sardines.

Canned sardines is also one of the instant foods we (Filipinos) rely on aside from canned tuna especially when our salary is in the “danger zone”. Like canned tuna, we eat sardines with rice or even sauté it and mix veggies with it. We also mix it with pasta and we make omelette made with sardines, too. My brother and I mix sautéed sardines with cooked instant noodles, too.

I don’t make Tortang Sardines often because when I look for sardines in the pantry, it means only two things – either I am starving and don’t have time to cook or I am badly craving for it. The usual thing I do is just to pour it on top of warm white rice and eat it with an egg.

Making Tortang Sardinas is not difficult and you will just need a few ingredients to make them. In this recipe, I used spicy canned sardines in tomato sauce. I didn’t include the sauce in the omelette mixture as I want it to be served as well along with calamansi. If you want to include the sauce, then it is okay, but you might want to adjust the measurements.

Tortang Sardinas can also be enjoyed with rice, eat them as is or eat with Pandesal. These came out really nice. I enjoyed it with rice with the sauce on the side.

I am taking these with me to Fiesta Friday #296, hosted by Angie.

I hope you can try the recipe and let me know. I’ve shared a video on my YouTube channel. Please don’t forget to like, share, and subscribe. See you there! 😉

Ingredients

  • 2 tbsp cooking oil
  • 1 onion chopped
  • 2 cloves garlic chopped
  • 1 egg
  • Pinch of ground black pepper
  • Pinch of salt
  • 2-3 tbsp all-purpose flour (see notes)
  • 3 tbsp sliced spring onions
  • 2 small cans of sardines in tomato sauce drained but reserve the sauce

Instructions

  1. In a pan over medium heat, add cooking oil. When the cooking oil is hot enough, add onion and garlic; sauté until fragrant and onion is translucent. Remove from the pan and transfer to a plate. You turn off the heat for now.
  2. Add egg, all-purpose flour, drained sardines, spring onions, cooked onion, cooked garlic, salt, and pepper in a bowl. Mix everything together.
  3. In the same pan over medium heat, add about 2-3 tbsp of the mixture and cook each side until browned.
  4. Drain on a stack of paper towels to remove excess oil.
  5. To serve, place the reserved sauce in a bowl and add calamansi juice or lemon juice. Enjoy with rice or with bread, it is up to you.

Recipe Notes

Using 2 tbsp of all-purpose flour will give you a little soggy result, but it is tastier. Using 3 tbsp of all-purpose flour will give you a firm omelette. Personally, I use 2 tbsp.
