Chiffon Cupcakes

Time runs very fast, yes?  Do you know what day is it? It’s Fiesta Friday… hosted by the awesome Angie of the Novice Gardener. We all need some treat after having those ‘bad days’ at work or I must admit, also at home. So what are you guys waiting for? Come and join us!! 😉

Btw, how was everyone’s week? Well, I had a blissful week… just minus the pain I had (and still have) due to my migraine. In the past, when my day starts with migraine, the whole day is ruined and I keep on complaining about it. Obviously, nothing happens – it just makes my mood out of control. Then I realized that when I do everything I can to shoo away this Ms. Migraine, but it really wants to stay for a while, what more can I do? Nothing. Just wait until it’s gone. I finally realized that I don’t have to stress myself out with the things I cannot control. Yes, I have done my part in taking medication and some alternatives. If the pain doesn’t go away yet, then I just have to wait. Go on with my life and SMILE. 🙂

Okay, enough with the migraine thing as I have something for everyone…

Few days ago, I cooked the first love of my life, err… I mean tummy – my Filipino Spaghetti. Oh, did I say first love? Uh, how about the Chicken Curry? Fine. Let them share on the first spot. 😀 Anyway, when I cooked it, I don’t think I had bread to go with the pasta and I was feeling a little lazy to buy some. So, I figured out I need something that goes with it. Then a childhood memory came…

During parties, this pasta will not be complete without having its partner – Chiffon Cake. And because I don’t have this special baking pan for the cake, I decided to look for a recipe for cupcakes. Besides, cupcakes are cute… and can be gone in sixty seconds. 😀

I followed this recipe (just without the orange zest, juice and frosting), but only made half of it. Apart from the fact that I only have one oven rack, 24 cuppies were too many, I thought. Okay, I was wrong – so wrong. I proceeded with baking only 12 and when they’re cold (really?) I ate one cupcake. And then, two… three… four. Ooopps! 😀 Then after a while, another hand (honestly, not mine) took a cupcake, and another one… and you know what happened!

Where are the cupcakes?? Did somebody bake cupcakes? I think it was just a dream!! 

Chiffon Cupcakes

  • Servings: 24 cupcakes
  • Difficulty: easy

Ingredients:

For the egg yolk/batter mixture:

  • 1 ½ cups cake flour
  • 3/4 sugar
  • 1 tsp baking powder
  • ¼ tsp salt
  • 1/3 cup canola oil
  • 4 egg yolks
  • 1/3 cup water
  • 1 tsp vanilla

For the egg whites/meringue:

  • 4 egg whites
  • ¼ tsp cream of tartar
  • ¼ cup sugar

Instructions:

  1. Preheat oven to 325 F. Line 24 muffin cups with paper liners.

For the egg yolk/batter mixture:

  1. In a jug, mix oil, egg yolks, water and vanilla extract. Set aside.
  2. In a large bowl, sift cake flour, sugar, baking powder and salt.
  3. Make a well in the center and pour in wet ingredients. Beat until smooth (about 3 minutes).

For the egg whites/meringue:

  1. In another bowl, add in egg whites and cream of tartar. Beat until foamy. While beating, gradually add sugar until stiff peaks.
  2. Diving the meringue into three portions, gently fold this mixture to the egg yolk/batter mixture until no white steaks is visible.

Baking the cupcakes:

  1. Fill your paper lined muffin cup about ¾ full.
  2. Bake for 20-30 minutes or until toothpick inserted in the middle comes out clean.
  3. Remove from the oven and let them cool in the muffin pans for about a minute.

So what happened? I baked again!! Should really have followed the full recipe, yeah? I will do better next time. But the same thing happened again! Cupcakes were gone very fast – very, very fast. Luckily, few had been eaten together with the pasta. Few. Just few.
