Gourmet Tuyo Pasta with Sundried Tomatoes

When it comes to pasta, I prefer the saucy ones and the ones with like a “million dollar” ingredients other than the ones with the simplest ingredients. I have tried a pasta dish with just olive oil and dill, and I loved it. I just don’t want to make it myself because it looks “sad” to me. If I make it myself, I am sure I’ll add a cream at the end… then it becomes another dish.

After the successful Gourmet Tuyo Pasta in Cream, I thought I’d give cream-less and meat-less pasta a chance. I had a bottle of gourmet tuyo and sundried tomatoes, so why not??

This dish can be put together in 15 minutes and that’s one of the things I love about it. Also, very few ingredients are needed – oil, butter, garlic, gourmet tuyo, sundried tomatoes and pasta. You can put any add-ins if you like – bellpeppers, olives, mushrooms. For me, lemon is a must – it makes the dish more delicious. Since the dish doesn’t contain any cream, I ate a lot. I felt satisfied and happy. For me, this is perfect for somebody who is in a hurry but still wants to enjoy a simple but delicious meal.

Gourmet Tuyo Pasta with Sundried Tomatoes

A simple pasta dish that is great for everyone who is in a hurry, but still wants a delicious and satisfying meal.

Ingredients

  • 200 g pasta I used fusilli
  • 1 tbsp butter
  • 2 cloves garlic minced
  • ½ cup sundried tomatoes chopped
  • 1 bottle gourmet tuyo drained but reserve the oil
  • ¾ cup sweet kernel corn
  • Salt & pepper to taste
  • Lemon juice

Instructions

  1. Cook the pasta according to package instructions.
  2. In a skillet with medium-high heat, add 1 tbsp oil from the gourmet tuyo. Add butter and melt.
  3. Add garlic and cook until fragrant being careful not to burn it.
  4. Add gourmet tuyo, sundried tomatoes and stir for about a minute.
  5. Add the pasta and corn. Stir and season with salt, pepper and lemon according to your taste. 

Recipe Notes

You can, of course, adjust the amount of the ingredients according to your liking. You can also put any add-ins you like.
