Chicken and Corn Fritters with Sriracha
These Chicken and Corn Fritters with Sriracha are one of the perfect appetizers you’ll ever have.
I love fritters, but I thought, adding cheese to them will make them taste weird. I know… do not give me that look. When I was doing the Whole30 program, I tried making fritters and I omitted the cheese… and they tasted like something’s missing. Maybe it’s the cheese?? I don’t know. Then I saw Natasha’s Tender Chicken Fritters and I was inspired.
These fritters are not only delicious, but they are very easy to prepare. You can keep the mixture in the fridge to develop the flavor or you can just proceed with the frying if you don’t have time.
About the ingredients, you may already have most of them on hand. I was so lazy to get myself a bundle of dill, so I used spring onions and used a mixture of grated cheddar cheese and mozzarella because that’s what I had. I also added corn because I can add corn in everything like I can put Sriracha in almost everything. I wanted my fritters to have a bit of kick, I saw a bottle of Sriracha inside the fridge – you know what happened next.
These Chicken and Corn Fritters with Sriracha turned out perfect – cheesy, tender, a little spicy and sour from the Sriracha, and sweet from the corn – everything I want in chicken fritters! I served them with a tartar sauce and they were amazing! I ate some as they are and I used some in sandwiches. I toasted the insides of a bun like you are making burgers, then my burger sauce, fritters and done! Of course, you can enjoy these however you want.

Chicken and Corn Fritters with Sriracha
These will be your instant favorite - cheesy, tender, a little spicy and sour from the Sriracha, and sweet from the corn.
Ingredients
- 300 g chicken breasts
- 1 egg
- 2.5 tbsp mayo
- 2.5 tbsp all-purpose flour
- 100 g mozzarella and cheddar cheese combined (or just mozzarella)
- 1/2 - 3/4 cup kernel corn drained
- 1 tbsp spring onion green part
- 1/4 tsp salt
- 2 tsp Sriracha
- Cooking oil
Instructions

Chop the chicken breasts into small pieces. Place in a bowl and set aside.

Add egg, mayo, flour, cheese, corn, spring onions, salt and Sriracha.

Mix just until combined. You can cook this immediately or can be kept in the fridge for two hours up to overnight to develop the flavor.

When ready to cook: In a skillet over low-medium heat, add oil. When oil is heated, add about 1 1/2tbsp of the mixture and fry on both sides until browned.

Place on a stack of paper towels to dry excess oil.

Serve with your favorite sauce. I served mine with tartar sauce.
