Level-Up Delimondo Caldereta Corned Beef

I love Caldereta and canned corned beef and I was thrilled when I found out about Delimondo Caldereta Corned Beef.

Caldereta is a Filipino meat stew. The sauce commonly consists of liver paste and tomato paste/sauce. Vegetables like potatoes, carrots and bell peppers are added. I am a huge fan of Caldereta, but there are 2 reasons why I don’t cook it: (1) I don’t have that kind of patience to wait for the beef to be tender, and (2) I live with my BFF and she’s not a huge fan; I don’t wanna put up with all that effort and eat it alone. Do I make sense?

Well, maybe one day… but now, I am happy with this “level up” Delimondo Caldereta Corned Beef.

The canned corned beef itself, no added anything, is delicious on its own. What I love about this variety of canned corned beef is that it has cubes of beef. However, I’d love to make it better or to look like Caldereta by adding veggies and others.

I am so happy with the result – love love the taste! It’s 100/10 for me – savory, sweet!🤤 It satisfied my cravings and I think this may become a monthly thing.

AND great news!! My BFF loved this!! So I may be inspired to make Caldereta. Hmmm… 🤔

NOTES ON DELIMONDO CALDERETA CORNED BEEF:

  • To enhance the taste, I added tomato paste and beef cube. You may also add liver paste if you want.
  • You may add water to make it saucier.

Level-Up Delimondo Caldereta Corned Beef

A good alternative to Calderata if you are craving one. Perfect with warm rice!

Ingredients

  • Cooking oil
  • 1 potato cut into chunks
  • 1 carrot cut into chunks
  • 3 garlic cloves chopped
  • 1 onion cut into wedges
  • ½ cup green bell pepper cut into squares
  • ½ cup red bell pepper cut into squares
  • 260 g Delimondo Caldereta corned beef
  • 1-2 tbsp tomato paste
  • ½ beef cube
  • Salt & pepper to taste
  • Sugar optional

Instructions

  1. In a pan over medium-high heat, add cooking oil. Add carrot and potato chunks, cook until tender. When cooked, remove from the pan and set aside.
  2. On the same pan, add garlic; cook until fragrant. Add onion and bell peppers, cook until onion is soft.
  3. Add Delimondo Caldereta corned beef, tomato paste, beef cube and cooked carrot & potato chunks. Cook for another 5 minutes. (Note: You may add water at this point if you want a saucy outcome.)
  4. Season with salt and pepper. You may also add sugar if you want.
  5. Serve with warm rice! Yum!!

    It looks delish, Jhuls! I’ve had caldereta from the Filipino restaurant and while it tastes great, I’ve always thought it’s a little too greasy. Or was it the menudo that’s greasy?! I can’t remember now. Point is, I should try making it myself and I’m glad I have this recipe to try.
