Salted Egg Chicken Popcorn

I didn’t expect that I would love this Salted Egg Chicken Popcorn a lot.

I’ve been making salted chicken eggs whenever I buy eggs, and that’s twice a month. So, every month month, I brine 10-12 eggs that are ready to be boiled after 21-23 days. There are times that I extend the brining period up to 42 days.

I am actually experimenting on how to get salted eggs with oily egg yolks. If you are from the Philippines or have tried salted egg before, you know what I’m talking about.

Anyway, on to the Salted Egg Chicken Popcorn…

Since I started seeing dishes like salted egg shrimps and salted egg chicken wings, I got really curious about it. I was planning to make one using chicken wings but life got busy and settled with frozen chicken popcorn instead. Gladly, it turned out amazing, although I really want to try the one with shrimps or chicken wings. Hmm, I need to add it to my priorities.

Salted Egg Chicken Popcorn is simply deep-fried frozen chicken popcorn with salted egg sauce. The salted egg sauce is made of salted egg yolks, butter and garlic. So, it’s buttery, creamy and delicious!! It’s amazing with rice!!

NOTES ON SALTED EGG CHICKEN POPCORN:

  • I used homemade salted chicken eggs. You can use salted duck eggs (homemade or store-bought).
  • Instead of frozen chicken popcorn, you can use 400 g fried chicken wings. Life is busy so I used frozen chicken popcorn.

Ingredients

  • Cooking oil
  • 400 g frozen chicken popcorn
  • 150 g unsalted butter
  • 6 cloves garlic minced
  • 4 chilis deseeded
  • 8 salted egg yolks crushed

Instructions

  1. In a pan over medium-high heat, add enough cooking oil (about 1 inch deep).
  2. When the oil is hot enough, add frozen chicken popcorn and cook until golden brown. Remove chicken popcorn from the pan and drain to remove excess oil. You also need to remove most of the oil and only keep about 1 tbsp in the pan.
  3. On the same pan, add butter. When most butter is melted, add garlic. Cook the garlic until fragrant, but do not brown too much. Next, add chilis and crushed salted egg yolks. Mix until frothy.
  4. When the sauce is nice and frothy, add fried chicken popcorn. Mix until chicken popcorn is well-coated.
  5. Serve with rice!!

Recipe Notes

At first I thought you’ve made popcorn that’s been flavored with salted eggs. Duh! Though that might have been interesting, right?! Anyway, I’ve seen all kinds of salt egg flavored snacks at the Asian market. It’s a new thing and it’s a good thing! I especially like the potato chips. So addicting, right?! But I do have a question, are the egg yolks already cooked or raw?
