Chicken Pot Pie
After the Eid prayer, my friends and I were planning to meet. One of them even promised for a treat, but there have been conflicts – some wanted to stay put at their homes; some wanted to work (overtime) and some wanted to go somewhere else… Me? I only wanted to go to the mall – buy some chocolates kitchen wares, a lot of books and a book. One of my friends decided to go with me, so we went together. I thought it will be FULL of fun, but I was wrong. The first hour was fine and you can see my smile from ear to ear… until my tummy ached. 🙁 Nonetheless, the Eid holiday was fun as I had my chocolates with me. The book? Oh, well… I did not take anything – I just stared at the books and I felt that the books wanted to come with me, but I told them that it’s not yet time. 😀 (Don’t they even know how much I wanted to take them?) I wanted to take more than five books and that is not good for my pocket. Also, I promised myself not to purchase a book until The Blood of Olympus comes out. The scene – I leave that shelf where the books I wanted to buy where located and try to go out of the bookstore… but then I come back again and try to leave… come back and try to leave. The ending? I have not taken anything, still. I decided to read reviews first and I’ll come back for that book, hoping that it’s good.
And can you believe that I had no appetite for like four days now?? And I am not kidding! I was planning to bake something, but I was really feeling tired lazy. Of course, I ate something. But you know… my friends would know if I am not okay… because they know how much big my appetite is. They always ask me where do I put everything I eat. 😛
Moving on to FF#27, I wanted to bring something sweet for today’s FF, but my body won’t cooperate with me. What’s wrong with me? Maybe too exhausted? Maybe too lazy? Too lazy, I guess. 😛
Anyway, I will bring something else… Did you remember the Creamy Cottage Pie? I received some comments that it’s like a Chicken Pot Pie. Hmmm, it is indeed from my Chicken Pot Pie. 😀
When I told you that I was preparing a different dish before the cottage pie [as I was planning to make the latter the next day], I was actually making a chicken pot pie. What happened was I only had two ramekins and wanted to use the remainder of the pot pie so I decided to turn it into cottage pie as they almost have the same ingredients… well, except for the ‘creamy’ stuff. But it turned it to be very good and I loved the creaminess in the cottage pie.
CHICKEN POT PIE Recipe
- Difficulty: easy
Ingredients:
- 1 tbsp butter
- 1 onion, chopped
- 4 cloves garlic, crushed
- 1 ½ cup green peas
- 1 ½ cup carrots, diced
- 1 ½ cup chicken, diced
- ½ cup red bell peppers, chopped
- 1 cup (250 ml) heavy cream
- 1-2 cups milk
- 1 cup chicken stock
- Bread or puff pastry for the ‘toppings’
- Salt and pepper, to taste
- A pinch of nutmeg
Instructions:
- Melt butter in a pot (in a medium heat). Sauté garlic and onion.
- When veggies are fragrant and cooked, add in diced chicken pieces; cook for five minutes.
- Add in carrots, green peas and bell peppers. Add chicken stock. Cook for another two minutes or until veggies are tender.
- Lower the heat. Add heavy cream and milk; simmer until the sauce thickens.
- Turn off the heat. Set aside.
- Get ovenproof dish (I used ramekins).
- Put slices of bread at the bottom of the dish. (This is optional. I just want a little something at the bottom.)
- Pour in the ‘chicken pot pie’. Top with slices of bread or puff pastry.
- Bake at 400 F for 35 minutes or until the bread turns golden brown.
Note: Raisins could be added at the ‘chicken pot pie’ just before pouring it to the baking dish – it will add a little sweetness to the dish.
I love, love this chicken pot pie – creamy and the bread at the bottom gives it a little ‘something’. Puff pastry is good at the top, but it was not available during the time I made this. And the reason why I have made this is I wanted to use the two days old bread I had.
Ugh! I hope I’ll be back on track again to make something sweet.
What are your plans during the weekend? Any movies to watch? Tell me, maybe we have the same taste for movies or maybe I could try watching what you love. 😉
Thank you to the ever kind, Angie, and to our co-hosts.
Happy FF#27!

Bubbles – sorry to hear that you weren’t feeling great – hope you are feeling back to your usual self now. I love your chicken pot pie with the bread topping – much more delicious than puff pasty. Genius!! I’ve started on Game of Thrones so I shall be watching a few episodes over the weekend. Have a wonderful weekend and Happy Fiesta Friday!
Jhuls
Oh, Selma… I am still not my usual self and I don’t like it. :'( I am still making up my missed fasts – I still need one week more.
I love puff pastry, but I love the texture of the bread better.
Hmm, Game of Thrones. Did you start from Season 1? I forgot in which season are they now. I have tried watching Season 1, but I stopped. With all of the people talking about Game of Thrones, I might try watching again. 🙂 Thanks for sharing, Selma. I have missed you a lot. I hope you are having a wonderful time and have a safe weekend. <3
Selma's Table
Jhuls – I hope you feel better soon – you must try and rest a little rather than exhausting yourself by doing too much x GoT – I started from Season One – finished that last night – and I have really enjoyed it so far – great characters and I also read the plot recaps on wiki to make sure that I haven’t missed anything. Sending you lots of love xx
Jhuls
What do you mean by rest, Selma? 😀
Oooh! I really need to go back to the GoT. Thanks, Selma. I hope you enjoy the week ahead. <3
Ngan R.
Love your take on chicken pot pie, Jhuls! Looks delicious, and so crusty with that bread on top. I happen to like bread toppings over puff pastry because it gives things like chicken pot pie a little more flavor and oopmh. Happy weekend, dear!
Jhuls
I am glad that you agreed with me on the bread topping, Ngan. It really gives something to the pie. Happy weekend to you as well. <3
lapetitecasserole
I’ve never had a chicken pie, it’s something that we’re not used in Italy, but, trust me, I always have wanted to try. The bread crimps make this plate even more yummy! Have a great we Jhuls, take care!

Lisa
Jhuls, what great “comfort food”! Your pix look too good to eat. I will definitely try this out and add in some of my garden veggies! Happy FF!

Michelle
Looks yummy Jhuls! I’m sorry you’ve not been feeling good, I hope you’re back to your usual self soon!
As for movies – I went to see Guardians of the Galaxy last night and i can’t stop raving about it, it was amazing! Definitely worth seeing!
It’s my last weekend in the the US for a while, probably gonna spend it being lazy and indulging in a few of my american favourites – and hopefully bake with some peaches while I have the chance!
Jhuls
Guardians of the Galaxy is on my list, Michelle. The trailer looks amazing, how much more the movie itself? So excited to watch it. 😀
You weekend sounds amazing. Me? I baked something yesterday and it turned out really good – I love it. But my appetite did not come back yet, so I ate little and packed the others for friends and co-workers. :'(
Thanks for being here, Michelle. <3
Michelle
The movie was even better than the trailer and reviews will have you think, I;m going to see it again today! If there are two things people know about me it’s that I bake and i love Marvel – and this marvel movie is probably their best! I hope you like it when you do see it, do let me know what you thought!
Aw I’m sorry your appetite isn’t back yet, I hope it comes back soon and when it does you’ll have an excuse to indulge to make up for lost time hehe! I hope you post what you baked though since it turned out so well!
much love xxx
Jhuls
I love Marvel as well, Michelle. It’s just so frustrating that I have seen Amazing Spiderman 2 until now. :'( I’l have to work on those movies I missed from the cinema. 😀
Hmm, that’s great – I will have an excuse. I will tell that to myself when the time comes. 😀 And as for the one I baked, it will be for FF next Friday as I need to bribe FF crowd – I have a favor to ask. And maybe you’d love to volunteer on that. 😀
Thanks a lot, Michelle. <3
Michelle
I haven’t seen Amazing Spider-Man 2 yet either! I was too busy going to see Captain America: The Winter Solider 6 times in the cinema (no I’m not exaggerating haha)
Ooh I look forward to seeing your post and what the favour is, I’m sure I’ll be happy to volunteer!
Jhuls
Ohhhh!! The movie must be really really amazing!!! <3
Martina

Jhuls
I am hoping that, too, Margot. I baked something yesterday, but I ended up packing them for my friends. It’s not awful – my appetite did not come back yet. And here I am trying to figure out what my tummy wants. 😀
Thank you so much for being here, Margot. And thanks for co-hosting. I hope you have a safe weekend. <3

Jhuls
Thank you, Chef Julianna! I will try if I can find my old self tomorrow and bake. 😀 Happy FF to you and have a lovely weekend!
Patty Nguyen
What a great idea to use stale bread! I think I would like this more than the traditional puff pastry! Now one day we will meet and go shopping for kitchen toys and books together. We might have to win the lottery beforehand though. I am sort of obsessed with kitchen things and books. 😛
Jhuls
I think there should be a shop or mall that never close so we could hang out there and soon, our pockets will be empty and can’t go back home. 😛
Patty Nguyen
And we wouldn’t have enough hands to carry all of our bags!
Jhuls
That’s right. 😀

Lovely, yummy Chicken Pot Pie Jhuls 🙂 Have a great weekend and HFF too 😀
Jhuls
Thank you, Linda!! I hope you enjoy your weekend! <3

Great looking recipe Jhuls- pot pie is always a perfect thing in my book.
I do intend on going to the movies tomorrow. “Get On Up”, the James Brown biopic is opening tomorrow in the USA, and since my Dad is a die-hard James Brown fan, I’m going with him. I’ve heard it’s a great movie, so I’m pretty excited to see it.
Thanks for bringing pot pie to this week’s FF- I’ll definitely be tucking into this 😉
Jhuls
Thank you, Jess. I might go on and check that movie. Enjoy the movie and have a fab weekend! <3
