Chicken Pot Pie

After the Eid prayer, my friends and I were planning to meet. One of them even promised for a treat, but there have been conflicts – some wanted to stay put at their homes; some wanted to work (overtime) and some wanted to go somewhere else… Me? I only wanted to go to the mall – buy some chocolates kitchen wares, a lot of books and a book. One of my friends decided to go with me, so we went together. I thought it will be FULL of fun, but I was wrong. The first hour was fine and you can see my smile from ear to ear… until my tummy ached. 🙁  Nonetheless, the Eid holiday was fun as I had my chocolates with me. The book? Oh, well… I did not take anything – I just stared at the books and I felt that the books wanted to come with me, but I told them that it’s not yet time. 😀 (Don’t they even know how much I wanted to take them?) I wanted to take more than five books and that is not good for my pocket. Also, I promised myself not to purchase a book until The Blood of Olympus comes out. The scene – I leave that shelf where the books I wanted to buy where located and try to go out of the bookstore… but then I come back again and try to leave… come back and try to leave. The ending? I have not taken anything, still. I decided to read reviews first and I’ll come back for that book, hoping that it’s good.

And can you believe that I had no appetite for like four days now?? And I am not kidding! I was planning to bake something, but I was really feeling tired lazy. Of course, I ate something. But you know… my friends would know if I am not okay… because they know how much big my appetite is. They always ask me where do I put everything I eat. 😛

Moving on to FF#27, I wanted to bring something sweet for today’s FF, but my body won’t cooperate with me. What’s wrong with me? Maybe too exhausted? Maybe too lazy? Too lazy, I guess. 😛

Anyway, I will bring something else… Did you remember the Creamy Cottage Pie? I received some comments that it’s like a Chicken Pot Pie. Hmmm, it is indeed from my Chicken Pot Pie. 😀

When I told you that I was preparing a different dish before the cottage pie [as I was planning to make the latter the next day],  I was actually making a chicken pot pie. What happened was I only had two ramekins and wanted to use the remainder of the pot pie so I decided to turn it into cottage pie as they almost have the same ingredients… well, except for the ‘creamy’ stuff. But it turned it to be very good and I loved the creaminess in the cottage pie.

CHICKEN POT PIE Recipe

Ingredients:

  • 1 tbsp butter
  • 1 onion, chopped
  • 4 cloves garlic, crushed
  • 1 ½ cup green peas
  • 1 ½ cup carrots, diced
  • 1 ½ cup chicken, diced
  • ½ cup red bell peppers, chopped
  • 1 cup (250 ml) heavy cream
  • 1-2 cups milk
  • 1 cup chicken stock
  • Bread or puff pastry for the ‘toppings’
  • Salt and pepper, to taste
  • A pinch of nutmeg

Instructions:

  1. Melt butter in a pot (in a medium heat). Sauté garlic and onion.
  2. When veggies are fragrant and cooked, add in diced chicken pieces; cook for five minutes.
  3. Add in carrots, green peas and bell peppers. Add chicken stock. Cook for another two minutes or until veggies are tender.
  4. Lower the heat. Add heavy cream and milk; simmer until the sauce thickens.
  5. Turn off the heat. Set aside.
  6. Get ovenproof dish (I used ramekins).
  7. Put slices of bread at the bottom of the dish. (This is optional. I just want a little something at the bottom.)
  8. Pour in the ‘chicken pot pie’. Top with slices of bread or puff pastry.
  9. Bake at 400 F for 35 minutes or until the bread turns golden brown.

Note: Raisins could be added at the ‘chicken pot pie’ just before pouring it to the baking dish – it will add a little sweetness to the dish.

I love, love this chicken pot pie – creamy and the bread at the bottom gives it a little ‘something’. Puff pastry is good at the top, but it was not available during the time I made this. And the reason why I have made this is I wanted to use the two days old bread I had.
