Ginisang Gourmet Tuyo
What is Tuyo? Tuyo is a Filipino term for dry, but Tuyo is also a type of dried fish (specifically, dried herring). It is considered food for the poor because of its low price. Now, the poor man’s fish went to the next level of fame by being placed in a bottle with oil and spices, and Filipinos call it Gourmet Tuyo. Of course, the fish has undergone some cooking before being bottled. The term ginisa refers to sauteed dishes.
I have three different brands of gourmet tuyo in the fridge. My tummy enjoys it with just plain rice. However, there are times that I want to upgrade it and make it even more delicious. It can be used in pasta dishes, put on a slice of bread, mix it with salad, and more.
Now, the question is, what is the easiest one?
While thinking about different ways to use gourmet tuyo, the idea of pesto eggs suddenly came to mind.
What I did was I sauteed the gourmet tuyo and added egg. (More on the instructions below.) After less than 15 minutes, my meal was ready.
I served it over rice instead of putting it on a slice of bread.
As expected, I love how it turned out. The step of sautéing it in onions, garlic, and tomatoes made it even more flavorful. I didn’t exactly make a completely new dish, but it feels nice to have elevated the humble gourmet tuyo.
NOTES ON GINISANG GOURMET TUYO:
- I love sweet & spicy gourmet tuyo, so I added a bit of sugar to this recipe because the gourmet tuyo I used is a little salty for me.
- You can add any seasoning you fancy, but I love to keep mine simple.

Ginisang Gourmet Tuyo
Ingredients
- Cooking oil
- 3 garlic cloves sliced
- 1 small onion sliced
- 4 cherry tomatoes sliced
- About 2 servings of gourmet tuyo
- 1-2 eggs
- Sugar to taste (optional)
- Spring onions & chilis sliced
Instructions

Add oil to a pan over medium heat.

When the oil is hot enough, add garlic. Saute until fragrant.

Add tomato & onion. Cook until soft. You can mash the tomatoes for more flavor.

Add gourmet tuyo and let it warm up.

If using sugar, add it at this point.

Add 1 or 2 eggs. You can break the yolks or keep them as is. Cook the eggs as per your preferred doneness.

Top with spring onions and chilis.

Serve over rice.
