Carinderia Style Giniling

This Carinderia Style Giniling reminds me of our former neighbor – an old couple.

Carinderia is a small (usually road side) eatery or restaurant that serves local homecooked meals.

In my hometown, there was an old couple who owned a sari-sari store (small convenience store). Along with the varieties of products they have in their small store, they also had small pots of homecooked meals and one of them is Giniling. Giniling is a Tagalog term for ground meat. Although they don’t have a typical style carinderia, they sell homecooked meals that can be found in carinderias.

Giniling is the only one that really caught my attention and became my favorite because it can be enjoyed immediately. Whenever I need something to bring to my BFF for lunch or just needed a quick lunch at home, Giniling from the old couple is what I usually get.

And because I really love their Giniling, I asked Lolo (Tagalog term for grandfather) if he can share the recipe and he gladly did. After that, I memorized the recipe by heart.🧡

His name was Berto and I mostly call this dish “Lolo Bert’s Giniling”.

The dish is very simple, easy to prepare and gets ready in less than 30 minutes. The main ingredients are ground beef and potatoes.

It is tasty, beefy and with a little kick from the ginger and ground black pepper. Goes perfectly with rice.

NOTES ON CARINDERIA STYLE GINILING:

  • Other vegetables can be added
  • I like to taste the ground black pepper in every bite so I added more than 1 tsp
  • Leftovers can be turned into “torta” or omelet

Lolo Bert’s Giniling (Carinderia Style Giniling)

Tasty ground beef stew that's perfect with rice and gets ready in under 30 minutes

Ingredients

  • Cooking oil
  • 2 tbsp grated ginger
  • 6 cloves garlic chopped
  • 1 onion chopped
  • 500 g ground beef
  • 1 cup diced potatoes
  • 1/4 cup soy sauce
  • 1-2 beef cubes
  • 2 tsp annatto powder dissolved in 2 tbsp water
  • 750 ml water
  • Salt & pepper to taste

Instructions

  1. In a pot over medium-high heat, add cooking oil.
  2. When the oil is hot enough, add ginger and garlic. Cook until fragrant.
  3. Then, add chopped onion. Cook until soft.
  4. Add ground beef and break down into smaller pieces. Cook until almost dry or the liquid has almost evaporated.
  5. Next, add potatoes, soy sauce, annatto powder dissolved in water, beef cube (or cubes) and water. Cover and simmer for 10-15 minutes or until cooked.
  6. Season with salt and pepper.
