Pancake Cereal / Mini Pancakes

Finally, I gave in and made TikTok’s Pancake Cereal / Mini Pancakes.

I was writing a blog post and the BFF showed me a video clip of Pancake Cereal / Mini Pancakes from TikTok. She wanted me to make them and I said ‘okay’. She showed me couple of videos of the same and told me the same thing.

I thought she was just joking because she knows that I hate making anything miniatures. Unfortunately, she was serious about it.😅

I love pancakes, but I even feel lazy making the regular sized ones, let alone the mini ones. It took me a while to make them but here I am.

Pancake Cereal / Mini Pancakes are just pancakes in tiny tiny form. They are time-consuming but they can be a good distraction when you are bored. Aside from that, they are super cute and fun to make.

To make Pancake Cereal / Mini Pancakes, we used a pancake mixture and put it into a squeeze bottle or a piping bag. Then we squeezed out the mixture onto the hot skillet – measuring about 3/4 inch each.

Unlike the regular sized pancakes, these came out thinner. Although I used a recipe for fluffy pancakes, my mini version didn’t come out fluffy. Overall, everything was great and well enjoyed.

Some serve this like a cereal in which they put milk along with other mix ins like sliced fruits. I prefer to serve this with maple syrup like the regular sized pancakes with butter and blueberries and sliced bananas.

Pancake Cereal / Mini Pancakes

Ingredients

  • 1 cup (130 g) all-purpose flour
  • 2 tbsp white granulated sugar
  • 2 tsp baking powder
  • pinch of salt
  • 3/4 cup (180 ml) milk (I used fresh milk)
  • 1 beaten egg
  • 1/2 tsp vanilla extract
  • 2 tbsp (30 ml) melted butter

Instructions

  1. Using a mesh strainer, sift the flour over a large bowl. Add sugar, baking powder, and salt. Mix everything.

  2. To the dry mixture, add beaten egg, milk, melted butter, and vanilla extract. Mix everything until no dry ingredients is visible. Do not over mix.

  3. Transfer the mixture into a squeeze bottle (or a piping bag).

  4. In a non-stick skillet over low-medium heat, squeeze out the mixture onto the skillet (about 3/4 inch in diameter – doesn't have to be exact but should be minis). You can also slightly grease the pan with butter or oil. I tried with butter and without – both are okay with me.

  5. When bubbles appear on top of the mini pancakes, you can flip now and cook the other side for a few seconds. When cooked, transfer them to a plate. Repeat the cooking process until the remaining mixture has been used.

  6. Serve with milk or maple/pancake syrup.
