Filipino Chicken Macaroni Salad
This Filipino Chicken Macaroni Salad is my all-time fave!!
My former roommate has a sister who brought Filipino Chicken Macaroni Salad in one of our gatherings. I was really amazed by how the salad tastes like, so I had to make my own right away.

In the Philippines, salad usually refers to a dessert food. It is sweet and usually made with different kinds of milk and cream. So when we say ‘we have a salad for dessert’, we don’t mean the salad with leafy greens nor the healthy ones. I am not sure if I know all our salad recipes, but I love all of the salads I know.
My ultimate favorite is the Filipino Chicken Macaroni Salad. It is made up of chicken, macaroni, condensed milk, cream, mayonnaise, sandwich spread, cheese, pineapple, carrots, onion, and bell pepper/capsicum. I also add raisins, but you can omit this if you don’t eat raisins (like my siblings). This Filipino Chicken Macaroni Salad is usually served during special occasions, but I make it anytime I BADLY crave for it.
Although I love this salad a lot, I don’t make it frequently as I am very lazy to chop onion and bell pepper, grate cheese and carrots and prepare all the ingredients. However, when the craving hits me badly, I make a huge batch like I am having a party. Making Filipino Chicken Macaroni Salad may seem time-consuming, but when you have the first taste, every effort of chopping and grating will make sense – absolute labor of love.
I’ve shared a recipe of Filipino Chicken Macaroni salad before, but I now find it less creamy. This version (without affecting the sweetness) is creamier, yummier and the best-tasting Filipino Chicken Macaroni I’ve ever made. Whenever there’s a gathering at our home, I always make this and it’s always a hit! One of the nicest things – bestie’s Sri Lankan friend loves this salad a lot. I never expected that non-Filipino would love this, too.

Filipino Chicken Macaroni Salad
Ingredients
- 200 g elbow macaroni cooked according to package instructions and COOLED
- 3/4 cup shredded chicken breast
- 75 ml (1/4 cup+ 1 tbsp) condensed milk
- 160 ml (2/3 cup) Nestle all-purpose cream (or 1/2 cup thick cream)
- 1/2 cup mayonnaise
- 1/3 cup sandwich spread
- 1/3 cup pineapple tidbits drained
- 1/4 cup red bell pepper
- 1/3 cup grated carrots
- 1/3 cup chopped onion
- 3/4 cup grated cheddar cheese
- 3 tbsp raisins
Instructions

In a large bowl, add condensed milk, all-purpose cream, mayo, sandwich spread, pineapple tidbits, red bell pepper, carrots, onion, and grated cheese. Mix very well.

Add the cooked elbow macaroni, shredded chicken breast, and raisins. Mix again.

Keep in the fridge to chill before enjoying.

Top with more grated cheese, if desired.

Please adjust the measurements accordingly, if needed.
Please make sure to let your cooked pasta cool down before using.
