Maple Oatmeal Muffins + Recipe Video

I hope the video of these Maple Oatmeal Muffins is not the last recipe video I will share.

It has been very difficult to shoot a recipe video since the day I was given additional working hours. Although I can make it after work, the natural light will not be available. I am torn between continuing and saying goodbye to making recipe videos. Let’s see what will happen…

In the meantime, let me share these Maple Oatmeal Muffins.

Maple Oatmeal Muffins

These muffins are mainly made with oatmeal and maple syrup. (We know, Jhuls. The title, duh!!)

I used pure maple syrup. You will taste that maple syrup, but I love that the muffins didn’t turn out very sweet. They came out moist and soft. I was just testing the recipe I found from Bunny’s Warm Oven and took a video for fun, but I am so pleased I had to share it.

I made a small batch only because I didn’t want to finish all the maple syrup I have. Pure maple syrup is quite expensive so I want to use it in more recipes. If not, I’ll only use it with pancakes and I don’t think my jeans would be happy about. Pancakes everyday? Not a good idea!

Back to the muffins… I spread the muffins with maple butter and they were fantastic! You can use regular. If you want to try making maple butter, there are recipes available. Ask Google. I served them with maple green tea. All maple, huh?

Maple Oatmeal Muffins

Maple Oatmeal Muffins

These Maple Oatmeal Muffins are made with pure maple syrup and they are not overly sweet. They are perfect when spread with maple butter.

Prep Time 5 minutes
Cook Time 15 minutes
Total Time 25 minutes
Servings 5 muffins

Ingredients

  • 40 g quick-cooking oats
  • 60 ml whole milk warm
  • 65 g all purpose flour
  • 1 tsp baking powder
  • Pinch of cinnamon
  • Pinch of salt
  • 90 ml pure maple syrup
  • 1 small egg
  • 30 ml melted butter cooled

Instructions

  1. Preheat the oven to 400 F. Prepare muffin pan lined with paper liners.
  2. In a small bowl, add oats and whole milk. Mix and set aside to cool down.
  3. In another bowl, add flour, baking powder, cinnamon and salt. Set aside.
  4. To the oat mixture, add pure maple syrup, egg and melted butter.
  5. Add this mixture to the dry ingredients and mix until just combined.
  6. Divide the batter into the paper liners. (I used only 5 paper liners.)
  7. Bake at preheated oven for 15-18 minutes or until a toothpick inserted in the middle comes out clean. Let the muffins stay in the pan for few minutes before moving them to a cooling rack to cool further. 

  8. Serve with maple butter or regular butter.
