Put water in a pan and bring to a boil. Add fresh noodles and cook for 2 minutes (or depending on the package instructions). When time is up, drain the noodles and place in a bowl with very cold water. Let it stay there for 30 second and drain again. Set aside until ready to use.

In a pan over medium-high heat, add cooking oil.

When the oil is hot enough, add garlic and cook until fragrant. Add onion and bell pepper slices, cook until soft. Add shrimps and cook for another 1 minute. Add carrots and sliced green beans and cook for 2 minutes. Add oyster sauce and sweet soy sauce. I also added water, about 2 tbsp. Simmer over low heat for 2 minutes. Add cabbage and cook for another minute. Add mung bean sprouts, cook for 30 seconds.

Do a taste test before adding the cooked noodles. Adjust your seasoning if needed.

Add the cooked noodles and mix until noodles are coated with the sauce.

Add sesame oil (if you want) and ground black pepper. As to the ground black pepper, I really didn’t measure; I added until I was happy with the taste.

Best if served during the same day. I also love it with fresh mung bean sprouts.
