Kisir (Turkish Tabbouleh)

It is a pepper/tomato paste-based bulgur wheat salad. It is sour, sweet and fresh - very filling and satisfying.

Ingredients

  • 1 cup (195) g fine bulgur
  • 1 1/2 cups (375) ml boiling water
  • 3 tbsp extra virgin olive oil
  • 1/3 cup sweet/mild pepper paste
  • 1 tbsp tomato paste
  • 2 tbsp dried mint
  • 1 tsp salt
  • 1/2 tsp cumin
  • 2 tbsp pomegranate molasses (plus more for drizzling)
  • 2 tbsp finely chopped fresh mint
  • 2 tbsp finely chopped fresh parsley
  • 1/4 cup chopped green/spring onions
  • 1/2 cup chopped red onions
  • 1 cup cubed cucumber
  • 1 cup chopped tomatoes (seeds removed)

Instructions

  1. Add fine bulgur and boiling water to a heatproof bowl. Cover and leave it for one hour.
  2. Meanwhile, let's prepare the pepper paste mixture. Combine olive oil, pepper paste, tomato paste, dried mint, salt, cumin, and pomegranate molasses.
  3. Fluff the "cooked" bulgur when the time is up. Add the chopped veggies and mix.
  4. Add the paste mixture and mix again. You can mix it using your clean hands. Do a taste test and adjust according to your liking.

Recipe Notes

  • You can adjust the ingredients (if necessary) after doing a taste test.
  • If pepper paste is not available, you can add more tomato paste.
  • Drizzle with more pomegranate molasses just before enjoying. So good!
  • You can add the chopped tomatoes just before serving. Or you can even replace it with bell pepper.
