Saucy Beef with Broccoli and Carrots

Beef with Broccoli and Carrots is one of my favorite dishes to eat, but some of the dishes I’ve tried are not saucy enough to my liking.

I don’t know if this dish should be on the dry side, but hey, it depends to the one who will consume the dish, yes?  I love saucy dishes. I love that moment when I can see my white rice all coated with sauce.

I’ve tried different recipes of beef with broccoli and carrots – one of them needs marinating, one of them needs blanching or steaming of broccoli and carrots. I mean, it’s not that complicated but maybe we can make it quicker? You know, when you are starving but still want to eat a delicious meal?

 In this recipe, I’ve stir-fried the broccoli and carrots for a few minutes until they are tender, and then I removed them from the pan. The beef is added next and then the stir-fry sauce mixture. It is very easy and quick. Before cooking this, make sure you have cooked your rice because I know you’ll need an extra serving. 😉 If you don’t want to eat white rice with this one, this is also good with quinoa. Hmm, cauliflower rice? Maybe.

For me, this is the BEST Beef with Broccoli and Carrots I’ve ever made and tasted. And I hope you will love this version, too. If you don’t want a saucy version, you can divide the stir-fry sauce in half.

Saucy Beef with Broccoli and Carrots

For me, this is the BEST Beef with Broccoli and Carrots I’ve ever made and tasted – it is saucy just the way I love it! The sauce has the right consistency and AMAZINGLY delish!

Ingredients

  • 2 tbsp cooking
  • 500 g good cut of beef thinly sliced
  • About 2 cups of broccoli florets
  • 1 carrot sliced
  • Toasted sesame seeds optional
  • Cooked white rice

For the stir-fry sauce:

  • 6 tbsp (90 ml) soy sauce
  • ¾ cup (180 ml) water
  • 4 tbsp brown sugar
  • 6 cloves garlic minced
  • 2 tsp grated ginger
  • 3 tbsp sesame oil
  • ½ tsp ground black pepper
  • 2 tbsp cornstarch

Instructions

  1. In a bowl, mix all ingredients for the stir-fry sauce. Set aside until ready to use.
  2. In a pan or skillet over medium-high heat, add about 1 tbsp of cooking oil. When the oil is hot enough, add broccoli and carrots. Stir fry until veggies are tender – this may take about 2 minutes, depending on the cut of your veggies.
  3. When the veggies are cooked, remove them from the pan and transfer to a plate.
  4. In the same pan over high heat, add about 1 tbsp of cooking oil. Next, add the beef in one layer if possible. If not, do it in batches. Cook the beef until no longer pink, making sure to turn the beef from time to time to cook evenly.
  5. When the beef is cooked, add the stir fry sauce. Mix and simmer over low heat until desired consistency is achieved. (Note: The sauce with thicken more once it cools down.)
  6. You can also do a taste test at this point then adjust accordingly.
  7. When you are satisfied with the consistency and taste of your sauce, you can add the veggies. Just mix to coat the veggies evenly.
  8. Turn off the heat and add the toasted sesame seeds if using.
  9. This is best enjoyed with white rice.
