No-Churn Mango Graham Ice Cream + Recipe Video

No-Churn homemade ice cream is one of the easiest treats you can make and you know that it is best for the summer season. It is also mango season so I ended up making ice cream with mangoes in it. And my friends, if you love mangoes, you know that this Mango Graham Ice Cream would be one of your favorite flavors of ice cream.

It took a while for me to make my second attempt on making no-churn ice cream. The first one was a brownie ice cream, but I found it much on the heavy cream taste (Duh! Heavy cream, yes?) so I am still fixing the recipe, trying to tone down the heavy cream taste. Ha! Good luck with that!

Moving on to this delicious Mango Graham Ice Cream…

From the name itself, you know that it contains mangoes and graham crackers. This combination is very common in the Philippines as it is used in a famous dessert called Mango Float. This Mango Graham Ice Cream consists of only four ingredients – heavy cream, condensed milk, mangoes, and graham crackers. I see other recipes using mango condensed milk (I didn’t have access to that) and yellow food color. Also, I don’t know what I will feel about mango flavored condesned milk. I think I’d rather use the combination of mango puree and condensed milk. Who’s with me??

Ahhh… everything was perfect – the texture, the taste, the creaminess of the ice cream. It is nice that there are chopped mangoes – something to bite. I just had to justify the size of the roughly chopped graham. You know, I am not really a patient person. 😛 Well, the graham crackers soften when mixed with the liquid ingredients, so it doesn’t matter, yes?

Mango Graham Ice Cream

Mango ice cream with graham crackers is one of the best ice cream flavors you’ll ever taste. It is very easy to make and it’s pure delight.

Ingredients

  • 500 ml (2 cups) heavy cream chilled
  • 1 14-oz can condensed milk chilled
  • 1 cup chopped mangoes to be pureed
  • 1 cup chopped mangoes to mix and use as toppings
  • 9 sheets graham crackers roughly broken

Instructions

  1. Before making ice cream, make sure that your bowl, beaters, container, milk, heavy cream, and mangoes are cold.

  2. Add 1 cup of chopped mangoes in a blender. Blitz until mangoes are pureed. Transfer to a bowl and add condensed milk. Keep in the fridge until ready to use.
  3. In a bowl, pour heavy cream. Beat until stiff peaks form.
  4. Gently fold the mango puree and condensed milk mixture (in thirds) into the whipped heavy cream.

  5. Add ¾ of the chopped mangoes and graham crackers (leave some for toppings), and mix.

  6. Transfer to a container, cover with cling film and freeze overnight or until set.
