Maple-Caramelized Bananas

Having only one day off limits my time in the kitchen. This one day off started more than two months ago and I haven’t made decent dinners or desserts since then. I’ve also wanted to do the Whole30 program again, but I just can’t find the time to prepare meals or I am way too exhausted after work.

The craving for something sweet started and you know how crazy it gets when you don’t answer to that craving. I have several bananas hanging in the kitchen (they have a special place, yes – hahaha!) and I remembered seeing pan-fried bananas with honey on Pinterest. Since I am picky when it comes to the brand of honey I use and that brand was not available, I chose to use pure maple syrup which was given to me by a very good friend.

So here’s my take on caramelized bananas >>> Maple-Caramelized Bananas and they are my new favorite!!

This recipe requires few ingredients. It is very easy to prepare and quick, too. One of the things you have to keep in mind is to use ripe, but FIRM bananas. You have to let the mixture boil and let it become sticky before adding the sliced bananas or else you will get soggy bananas. Take this advice from someone who got very impatient and did not follow her own instructions. Yes, that’s me!! Booooo!!

On the brighter side, this turned out delish!! I almost finished eating the caramelized bananas before I could even serve it with ice cream, which, FYI, I enjoyed all by myself. In the number of servings below, I  say this is for two persons, well, I always count myself as ‘two persons’.

I really loved this I made it again the next day and I made sure that I followed my instructions below. Too bad it was served as a dessert at dinner time and the light was not nice to shoot photos. But I promise that I would update the photos with more appealing bananas when I make this again. I could make this again today, but eating two liters of ice cream for two consecutive days is not good (please don’t tell my sister!).

Maple-Caramelized Bananas

These Maple-Caramelized Bananas will be your new favorite. They are not overly sweet and are perfect to add to ice cream, pancakes, French toasts, bread pudding and a lot more.

Ingredients

  • 2 large bananas ripe and firm
  • 4 tbsp pure maple syrup (or honey)
  • 1 tbsp butter (or light-tasting oil)
  • Pinch of cinnamon
  • Pinch of salt

Instructions

  1. Choose ripe and firm bananas. Peel and cut into 3/4 inch thickness. Set aside.
  2. In a non-stick pan/skillet over medium-high heat, melt butter.
  3. Add pure maple syrup, cinnamon and salt. Let the mixture boil and thicken.
  4. When the mixture gets bubbly, thick and sticky, add sliced bananas.
  5. Cook on both sides until the sticky syrup is coating the bananas really well.
  6. Remove from the heat.
  7. Serve with ice cream, crepes, waffles, pancakes, bread pudding, French toast, banana cake, and whatever you fancy. You may also add more maple syrup, if desired.
