Red Velvet Crinkle Sandwiches

The last few days have been crazy. I’ve completely lost my appetite, and honestly, I have no idea why. I thought that after Ramadan, I’d be back to indulging in all my favorite sweet and savory dishes. Turns out… I was wrong. So wrong. For the first time in my life—and for more than five days straight—I didn’t feel hungry at all. I didn’t crave anything. This is not me, right?

I had a mini brain storming session with myself, trying to figure out what I actually wanted to eat. Maybe something would sound good? I finally told myself, “I know what you want—sunny side up eggs.” Because, my dear friends, I know myself: when I can’t figure out what I want, I always have three go-to answers—sunny side up eggs, instant noodles, and processed/canned corned beef. And I knew that just eating one of those things would make me feel okay and get me back to normal.

Well… nothing happened.

During this dull phase, my BBF and I had this conversation:

(After suggesting a ton of foods, she finally gave up and threw out something totally non-food related.)

BFF: Maybe you’d like a KFC takeout?
Me: Nah, I don’t think so. Maybe I just need to bake something or cook, and then I’ll feel back to normal.
BFF: Don’t you like that? You’ve lost your appetite—this could be your chance to lose weight. Try smoothies or fruit.
Me: I’d love to eat something, but my stomach doesn’t want anything… and worse, I don’t even feel hungry.
BFF: Well, maybe it’s not food you’re looking for.
Me: Not food? Then what?
BFF: A book. Maybe you left your soul in that bookstore when you decided to leave that book behind.
Me: Maybe… maybe.

Isn’t she brilliant?

I still haven’t gone back to the bookstore. But I know I will… soon. And when I do, we’ll see.

Fast forward to baking day:
Over the weekend, I tried baking. I was hoping that the light inside me would come back.

Even without an appetite, I still managed to eat a sandwich and two crinkles. 😜 Believe me, these sandwiches were amazing! The crinkles themselves weren’t too sweet, and the filling? Oh, it was really good. If only my appetite had been at its peak that day, I wouldn’t have shared them with my friends and co-workers. 😂

But hey, these crinkle sandwiches definitely brought some joy. My colleagues kids were so happy!

These red velvet crinkle sandwiches are a fun twist on the classic cookie! These soft, chewy red velvet crinkle cookies are filled with a creamy, rich filling (think cream cheese or frosting) to create the perfect balance of tangy and sweet. The crinkles on the outside add a lovely texture, while the filling makes every bite melt in your mouth. They’re not only visually stunning with their vibrant red color, but they’re also an indulgent treat.

Red Velvet Crinkle Sandwich

Ingredients

For the crinkles:

  • 190 g (1 ½ cup, spoon and leveled) all-purpose flour
  • 12 g (2 tbsp) cocoa powder
  • 1 tsp baking powder
  • 1/8 tsp baking soda
  • ¼ tsp salt
  • 130 g (½ cup + 2 tbsp) white sugar
  • 70 g (¼ cup + 1 tbsp) unsalted butter, softened to room temperature
  • 2 large eggs room temperature
  • 7.5 ml (½ tbsp) milk
  • 1 tsp vanilla extract
  • 1 tsp vinegar
  • 30 ml (1 tbsp) red food coloring (start at ½ tbsp and then add more if needed)

For the cream cheese filling:

  • 4 oz cream cheese softened
  • ¼ cup powdered sugar or more if desired
  • 1 tsp vanilla extract
  • A pinch of salt

Instructions

For the crinkles:

  1. In a bowl, whisk together the flour, cocoa powder, baking powder, baking soda, and salt. Set aside.
  2. In another bowl, beat the softened butter and white sugar until pale and fluffy (about 3 minutes).
  3. Gradually add the eggs, one at a time, mixing well after each addition.
  4. Add the vanilla, milk, vinegar, and red food coloring, and mix until combined.
  5. Slowly add the dry ingredients to the wet ingredients. Mix just until everything is incorporated.
  6. Cover the dough with plastic wrap and chill in the fridge for at least 2 hours, or up to overnight.
  7. Preheat your oven to 350°F and line a baking sheet with parchment paper.
  8. Once the dough is firm, scoop about 1 tbsp and roll into balls.
  9. Roll the dough balls in powdered sugar until they’re fully coated, then place them on the prepared baking sheet.
  10. Bake for 9-10 minutes, rotating the pan halfway through baking.
  11. Remove from the oven and let them sit on the baking sheet for 5 minutes.
  12. Transfer the cookies to a cooling rack to cool completely before filling.

For the cream cheese filling:

  1. In a bowl, add the softened cream cheese and vanilla. Beat until smooth.
  2. Add powdered sugar and salt. Mix again.
  3. Keep adding and mixing the powdered sugar until you reach your desired consistency.
  4. Now, grab a crinkle, spread that heavenly cream cheese filling on top, and then sandwich it with another crinkle. Repeat and enjoy!
