In a pan over medium-high heat, add cooking oil. Add onion, tomatoes and red bell pepper; cook until veggies are soft.

Now, over low medium heat, add soy sauce, oyster sauce, honey, and Sriracha; mix everything and let simmer.

Meanwhile, heat a pot with water over high heat. When the water starts boiling, add dry instant noodles. Cook until noodles are firm then drain. Put the cooked noodles in the pan with the sauce and mix. Add sesame oil (if desired), garnish with spring onions and add more Sriracha if you like. You can also add toasted sesame seeds.

Turn off the heat and serve immediately.
