Salted Egg and Tinapa Fried Rice

Fried rice with salted and gourmet tinapa – a perfect breakfast dish that’s so flavorful and easy to make.

Ingredients

  • Cooking oil
  • 2 beaten eggs
  • 3 cloves garlic chopped
  • Choice of mixed veggies
  • 2-3 cups of day old rice
  • Gourmet tinapa
  • 2 salted eggs chopped
  • Spring onions sliced
  • Salt & pepper to taste

Instructions

  1. In a pan over medium-high heat, add cooking oil.
  2. When the oil is hot enough, add eggs and cook according to your liking. Remove the cooked eggs from the pan, transfer to a plate and set aside.
  3. Using the same pan, add more cooking oil. Add garlic and cook until fragrant.
  4. Add choice of mixed veggies and cook until soft.
  5. Next, add gourmet tinapa as much as you want but don’t add too much gourmet tinapa oil. Break down the tinapa into smaller pieces. Also add chopped salted eggs at this point.
  6. Add day old rice and mix until rice is warm and soft.
  7. Finish it off with sliced spring onions and by seasoning with salt and pepper.

Recipe Notes

  • Don’t add a lot of gourmet tinapa oil unless you want oily fried rice.
  • You can add your choice of mixed veggies.
