Binagoongang Talong at Sitaw

I love that this dish is so easy and quick to make, yet so flavorful. It is best with warm rice. This can be enjoyed with steamed okra and fried fish.

Ingredients

  • Cooking oil
  • 2-3 long eggplants sliced
  • 3 cloves garlic chopped
  • 1 onion sliced
  • 1 to mato sliced
  • 1-2 tbsp shrimp paste
  • 10 string beans sliced
  • Salt & pepper to taste
  • Warm white rice to serve
  • Fried fish to serve (optional)
  • Steamed okra to serve (optional)

Instructions

  1. Add cooking oil to a pot with medium-high heat.
  2. Fry eggplants on all sides. Remove from the pan once cooked and set aside.
  3. On the same pan, add chopped garlic; cook until fragrant.
  4. Add onion & tomato; cook until soft.
  5. Next, add shrimp paste and string beans. Cook for about 2 minutes. If necessary, you can add little water at this point cook the string beans. I didn’t have to.
  6. Add fried eggplants and stir for few seconds.
  7. Season with salt & pepper, to taste.

Recipe Notes

  • Other than eggplants and string beans, you can add more veggies if you like.
  • This recipe is just a guide, you can add/remove ingredients.
