Easy Coleslaw
Okay, here’s the thing: I’m really considering not renewing my website, thenotsocreativecook.com, when the time comes. But if I do that… what happens to all my posts? Do they just disappear? Gone for good? Anyone have any idea? 🤔 I mean, it’s still two years away, but knowing my luck, I might be broke and unable to pay for the renewal. So, we’ll see what happens, I guess. It’s a long way off, and who knows what life has in store, right? 🤷♀️
But enough about future problems, let me distract you with something far more important: my latest obsession—coleslaw. Yes, I know what you’re thinking: “Coleslaw? Really?” But hear me out.

I’ve eaten coleslaw before, and I’ve tried making it before too. The first time? Let’s just say it was a disaster. I can’t even remember exactly what went wrong, but it was bad news. Fast forward to last December. I flew back to the UAE, starving after a looooong and exhausting 9-hour flight. As soon as I landed, I knew I’d need food immediately. Our fridge at home? Empty. So I stopped by Spinneys in the airport and grabbed some salad, coleslaw, and roasted chicken. And let me tell you, after all that brutal long flight, that meal was the best thing I’d eaten in… well, ever. 😅 I absolutely fell in love with that coleslaw.
That moment? It inspired me to try making it again at home. This time, though, it worked out perfectly! I’ve made it a bunch of times since then.

Making coleslaw is so easy. Just chop up some cabbage (I like mixing green/white with purple for color), toss in some shredded carrot, and mix it all with a simple dressing. Plus, the best part? It keeps for days in the fridge. So, I get to eat it for days without worrying it’ll turn into a sad, soggy mess. Well, it actually doesn’t last that long in the fridge because it’s that good! 🤤
So if you’re looking for an easy, satisfying side dish (or, you know, main dish if you’re like me), give coleslaw a go. You won’t regret it.
One little tip, though: The dressing recipe I use is enough for about 300g of coleslaw mix. So, if you’re not into super creamy (or liquidy 😂) coleslaw, just halve the dressing and use around 200g of the mix. It’s all about how you enjoy your coleslaw!

Easy Coleslaw
Ingredients
Dressing:
- ¾ cup mayonnaise
- 2 tbsp white sugar
- 1 tbsp lemon
- 1 tbsp white vinegar
- 1 tbsp milk optional
- Salt & pepper to taste
Others:
- 300 g of coleslaw mix
Instructions

Combine the dressing ingredients in a bowl. Mix and taste-test. Adjust as needed.

Toss in the coleslaw mix and give it a good stir.

Chill in the fridge for a few hours before enjoying.
