Peanut Dressing

Is it weird that I am not a huge fan of peanut butter in sandwiches, but I am obsessed with this Peanut Dressing?

Yes, you got that right. I am not a huge fan of peanut butter sandwiches unless it’s a PB&J. Peanut butter in smoothies, peanut butter and bananas – also a no for me. I know, I know. However, I love fried peanuts A LOT, especially the Filipino version! I love anything peanut with strawberry jam, or a grape jelly. 

If you have been following this blog, you may have an idea that I started making salad dressings and I’ve been enjoying it. And when you have started making your own salad dressings, you want to try more. 

I tried making Peanut Dressing few months ago and I was hooked. I had to make it again and again. It was so good I had it for five consecutive days at work for my lunch. It was my first time to eat salad for straight five days with the same dressing. 

HOW TO ENJOY PEANUT DRESSING?

Peanut Dressing is not only amazing with salad, but also great with salad rolls, dipping sauce for grilled chicken, toss it with noodles, and so much more. I am telling you – if you love peanuts, you need this in your life. 

NOTES:

  • I used creamy peanut butter. I suggest you use the brand of peanut butter you enjoy.
  • The amount of water that should be added would depend on you, I added about 1/4 cup (60 ml). It may look runny before it’s refrigerated, but will thicken as soon was it cools.

Peanut Dressing

Sweet and savory peanut dressing that’s not only good for salads but perfect to toss with noodles and dipping sauce for grilled chicken, too.

Ingredients

  • 5 tbsp creamy peanut butter
  • 2 tbsp rice vinegar
  • 2 tbsp maple syrup
  • 2 tbsp soy sauce
  • 1 tbsp Sriracha
  • 1 tsp minced garlic
  • 1 tsp grated ginger
  • 1 tsp sesame oil
  • 2 tbsp ground peanuts
  • 1/4 cup (60) water (see notes)

Instructions

  1. In a bowl, add peanut butter and rice vinegar. Mix very well.
  2. Add the rest of the ingredients and mix again. Alternatively, you can use a blender to do the mixing.
  3. Transfer the mixture to a jar and put the lid on. Keep in the fridge for the flavor to develop.
  4. Enjoy with salad or whatever you prefer that you think will pair well with peanut dressing.
