Thai Style Red Curry Noodle Soup

I’ve been craving for anything with Thai red curry paste for weeks. In the end, I felt that I needed something comforting like a soup, so I made this Thai Style Red Curry Noodle Soup.

My craving started while I was recovering from my low hemoglobin level. I just woke up one day, the first thought I had was Thai red curry dish – anything as long as it’s with red curry paste. And I forgot about it. Do you ever forget about your cravings and go on with your life??

Few days after, the BFF went home with a soup from a shabu-shabu place. After tasting the soup, I told myself that I need to make the soup I want. So here I am sharing you this superb soup!

This Thai Style Red Curry Noodle Soup is one of the simplest and easiest soup you can make. Simple and easy, but huge on flavor. Imagine red curry paste with coconut milk and peanut butter. I don’t know about you but I love the combination.

I’ve always loved red curry dishes like this Chicken Meatballs in Coconut Curry Sauce, which I need to make again. I always have a bottle or two of red curry paste in the fridge just in case craving strikes anytime.

 I wasn’t expecting much from this soup, but when I tasted it the first time, I immediately want to make it again. My bad luck, I finished my red curry paste in this dish. Of course, I bought few small pots (just for “emergency”) as I cannot find anything online.

OMG!!! This Thai Style Red Curry Noodle Soup was incredibly delicious – it has the right balance of everything. It is comforting and satisfying. The soup tastes fantastic you’d want to finish everything all by yourself.

Notes:

  • You can use your choice of meat.
  • Add as many things you want like luncheon meat, more veggies, anything you fancy.
  • You can use the dry noodles from the instant noodles packet.

Thai Style Red Curry Noodle Soup

This Thai Style Red Curry Noodle Soup was incredibly delicious – it has the right balance of everything. It is comforting and satisfying. The soup tastes fantastic you’d want to finish everything all by yourself.

Ingredients

  • 1 tbsp cooking oil
  • 4 cloves garlic chopped
  • 1 tbsp grated ginger
  • 200 g sliced chicken breast or meat of your choice
  • 4 tbsp red curry paste
  • 1 heaping tbsp of peanut butter
  • 1 chicken cube
  • 1 tbsp fish sauce
  • 400 ml canned coconut milk
  • 3-4 cups (750 ml – 1 liter) hot water hot water
  • Salt & pepper to taste
  • Noodles pre-soaked in hot water (I used fresh egg noodles & vermicelli)

Toppings:

  • Bokchoi
  • Coriander
  • Roasted chili paste
  • Sliced chilis

Instructions

  1. Place the noodles in a bowl and pour hot water, enough to cover the noodles.
  2. In a pot over medium heat, add cooking oil.
  3. Saute garlic and grated ginger for a minute or two.
  4. Add chicken and cook until no longer pink.
  5. Add red curry paste, peanut butter, and chicken cube. Stir until combined.
  6. Pour coconut milk and hot water (see notes) and let it boil.
  7. Add fish sauce, salt & pepper.
  8. Turn off the heat.

To serve:

  1. Drain the noodles and divide them into single serve bowls.
  2. Pour soup over the noodles and add the topping of your choice.

Alternatively:

  1. You can add the uncooked noodles to the pot and let it cook with the soup.
