Tuna and Chickpeas Salad

I am not a salad person. If I eat salad, it will always be drowning with dressing. And when I say dressing, it is not homemade and not even the healthiest ones. I rarely eat salad. Sometimes, not even once in six months.

Usually, when I finish a round of Whole30, I eat healthy stuff for the next one week and then I come back to naughty foods. Well, I am proud to say that it’s been more than two weeks and I am still doing my best to eat more healthy stuff than naughty ones. Give me a round of applause, will yah? I think it’s about weighing the pros and cons.

Honestly, I was thinking of going back to my dirty eating lifestyle (eating all naughty foods I want), but I couldn’t imagine the feeling of waking up again with stiff plus swollen hands and feet. Whole30 really did made me feel better.

Soooo, I promised myself that I will do my very best to continue eating more healthy stuff. Of course, I’ll treat myself with naughty foods occasionally. Uh, define occasionally??

And because I need to eat healthy stuff this time, I try to fill the fridge with salads and other healthy dishes. In fact, I always make sure to have salad at work. Yay! I never knew that salad could be so satisfying and delicious!


Some of the things I love about salad – they can be prepared ahead of time, not time consuming, nutritious, can be customized according to your liking and can be so yummy, too.

This salad is made with some of my favorite stuff – chickpeas, tuna, cucumber, tomatoes corn. This salad has olives, too. Olives! They are not my huge favorite when they are not on pizza. 😀  The salad is superb on its own, but if you know how I much love my Harissa-Tahini Sauce, you know I love to mix it with almost everything.

I think the word “sauce” doesn’t go with salad, yes? So, tahini dressing, maybe?? Whatever term you’d want to use, they are perfect together. The sauce/dressing (whatever) is completely optional and you can use whatever dressing suits your tastebuds. As I said, the salad tastes lovely on its own, but I am not saying that you can’t make it yummier.

Tuna and Chickpeas Salad

This salad is a healthy way to fill up your tummy with a satisfying and nutritious meal. This can be served as a side dish or main meal.

Ingredients

  • 1 15 oz can chickpeas drained and washed
  • 1 can tuna in water drained
  • ¾ cup sweet kernel corn drained
  • ¼ cup chopped tomatoes
  • ¼ cup sliced olives
  • 1 English cucumber chopped
  • ¼ cup feta cheese crumbled
  • Salt & pepper to taste
  • Harrissa-tahini sauce/dressing optional (recipe below)

Instructions

  1. In a bowl, add all ingredients. Season to taste.
  2. Serve with the harissa-tahini sauce/dressing, if desired.

Recipe Notes

If you are going to use the Harissa-Tahini Sauce/Dressing, it might be more than enough. But don’t worry as it goes well with sandwiches and roasted chicken and veggies, too.

Harrissa-Tahini Sauce

This sauce might be your instant favorite as it goes very well with almost everything – from roasted chicken & veggies to salad. This can also be used as a condiment to add to sandwiches.

Ingredients

  • 1/4 cup tahini
  • 1 1/2 tbsp lemon juice
  • 1/4 cup water
  • 1 tbsp white vinegar optional
  • 2-3 tsp harissa
  • Salt to taste

Instructions

  1. In a bowl or jug, add tahini and lemon juice. Add water while whisking. (You can add little or more).

  2. Add in vinegar (if using), harissa and salt. Taste and adjust accordingly.

  3. Transfer to a thoroughly cleaned jar. Keep in the fridge until ready to use.
