Mini Egg Pies

Co-hosting FF15 with Selma was so much exciting, amazing, fun and crazy (in a good way, of course). I was literally grinning in front of the computer while I was reading and leaving comments. I had fun exchanging emails with Selma and Angie. And of course, I really had fun chatting with everyone! <3 If given another chance, I would love to co-host again! But I could pretend as one, too! 😀

This week has been the craziest week I ever had in months. It was super busy at work that I could not even leave my seat to pee (Thank you, Stacey, for clarifying things for me! 😀 ); no wonder I was so exhausted when I arrive home.  I thought I’m not going to make it to FF16 – I am ecstatic that I am here today! Wohoo!! 😀 I really wish that I would have  more free time during daytime, so I could catch up with what’s happening with you guys. One day, I will stop by and chat with everyone again. Well, I really hope it will be the soonest!

Do you think the Filipino cravings ended? Uh-oh! Not yet! But this will not be a new recipe, I will take you back to the first few months of my blog. I don’t think many of you have seen my first posts, so I will bring you one of my favorites.

I made these cutie little egg pies for my friend. I was supposed to make the regular-sized pie, but I know she’d love this more (she loves the crust more than the custard filling) so I figured out it is best to make it cuter. Besides, it’s her birthday and not  mine. So she should love these more than me. 😉 I enjoyed making these, though I know I had to deal with the crust – you know, the mixing of the butter and the flour. Good thing is no ‘flour powder‘ happened. 😀 (Be proud of me, Lori! Haha!)

I was just not satisfied enough with the color of the custard filling as the egg yolks were a little pale. 😐 Well, that’s fine! The important thing is they were delicious and really satisfied my cravings and made my friend happy. <3

Egg Pie Recipe can be found here. I used the same baking time and temperature for baking these on muffin pan.

These cutie little egg pies are also good for Fiesta Friday. Hmm, been bringing cute little treats for the last few FF’s, eh? 😀 They are more fun to eat. It’s not so good eating little treats while chatting – you’d never know that you have eaten too much! 😛 Hope you enjoy these and HAPPY FF16.

Here’s the Fiesta Friday Guidelines – join us if you still haven’t. I tell you – this is the most amazing party EVER!
