Beef Chao Fan

A flavorful beef fried rice. Quick and easy to make, it's perfect for busy days and meal prepping.

Ingredients

  • 2 eggs
  • 4 cloves garlic chopped
  • 1 onion chopped
  • 250 g ground beef
  • 4 tbsp oyster sauce
  • 2 tbsp soy sauce
  • 1 small carrot chopped
  • ½ cup chopped cabbage
  • ½ cup chopped greens I used pechay
  • 3 cups cooked rice
  • Salt & pepper to taste
  • Sliced spring onions

Instructions

  1. Add oil to a pan over medium-high heat. Once the oil is hot, add the eggs and scramble until cooked. Remove the cooked eggs from the pan and transfer them to a plate.

  2. In the same pan, add a bit more oil. Add garlic and onion, and cook for about five minutes until they are softened.

  3. Add the ground beef and break down into pieces until cooked.

  4. Stir in oyster sauce and soy sauce, and cook until the sauce is reduced.
  5. Add the vegetables—carrots, cabbage, and pechay—and cook for two minutes.

  6. Add the rice, mixing until it is well-coated and warmed through.

  7. Season with salt and pepper to taste.
  8. Add the cooked eggs and sprinkle with spring onions.

Recipe Notes

  • You can add more oyster sauce or soy sauce, if needed.
  • Adding ground black pepper is optional.
  • This can be served as is or enjoy with more protein like fried chicken or eggs.
  • Keep any leftovers in the fridge and best consume within 3 days.
