Shrimp Fried Rice with Pineapple

If you hate removing the shells from shrimp, cheers! I love shrimp too, but if I have to peel them myself, no thanks! I’ll pass. I choose my battles, you know? 😂

But a few months ago, a grocery store opened nearby, and they’re always calling my name whenever I walk by. So yes, I gave in! 😅 That’s why I’m sharing this Shrimp Fried Rice with Pineapple I made a few weeks ago.


Shrimp Fried Rice with Pineapple

A tasty mix of shrimp, pineapple, and veggies in fried rice – quick, flavorful, and perfect for any night!

Ingredients

  • Cooking oil
  • 2 beaten eggs
  • 250 g shrimps shelled and deveined
  • Shrimp heads/shells optional
  • 1/3 cup chopped carrot
  • 4 cloves garlic chopped
  • 1/3 cup sliced spring onions mostly white part
  • 1/3 cup chopped red bell pepper
  • 1/3 cup green peas
  • 2 cups cooked rice
  • 1/2 cup sliced pineapple
  • Liquid seasoning optional
  • Sliced pineapples I used the one from the can

Instructions

  1. Add oil to a pan over medium heat. Once the oil is hot, add the beaten eggs and cook until they reach your preferred doneness. Remove from the pan and transfer to a plate.
  2. Using the same pan, add more oil. Once the oil is hot, add the shrimp. Cook for 2 minutes per side. Remove from the pan and transfer to a plate.
  3. If using shrimp heads and shells, add them to the pan. Press down to release the juices. Let them cook for about 2 minutes, then remove the shells, leaving the juices in the pan.
  4. Push the juices to one side of the pan, and add more oil to the other side. Add the chopped carrot, garlic, and spring onions, and cook for about 2 minutes. Add the chopped bell pepper and green peas, and cook for another 2 minutes.
  5. Add the rice and “cook” until the rice is warmed through and soft.

  6. Add liquid seasoning, cooked eggs, shrimp, pineapple, and spring onions.

  7. Season with salt to taste.
