Biko with Durian Jam

Let me take you back to my childhood.😍

Biko is a classic Filipino delicacy made from sticky rice, coconut milk, and brown sugar. It’s basically a gooey, sweet rice cake that’s so comforting. But the real magic for me happened when we mixed it with durian jam. This combination was our go-to way of enjoying Biko, and it always felt like a special treat. Growing up, this was my absolute favorite way to enjoy Biko, and it brings back such fond memories of making it with my late mom.

For those who haven’t had the pleasure, Biko is a sweet, sticky rice cake that’s perfect for any occasion. It’s made by cooking glutinous rice and mixing it with creamy coconut milk and brown sugar. The result is a rich, chewy dessert that’s hard to resist.

Now, let’s talk about durian jam. If you’re not familiar with durian, it’s a fruit known for its strong aroma and rich flavor. For those who love it, durian jam is a creamy, sweet spread. I usually spread it on plain white bread, or enjoy it in cooked saba or cardava bananas with coconut milk, or this Biko. It’s like a little taste of the exotic fruit without the strong smell, which is perfect for those of us who are all about the flavor without the funk!

Biko with Durian Jam

Biko is a sweet, sticky rice cake that is made by cooking glutinous rice and mixing it with creamy coconut milk and brown sugar, with added durian jam to make it extra special. The result is a rich, chewy dessert that’s hard to resist.

Ingredients

For the sticky rice:

  • 2 cups dry sticky rice
  • 3 cups water

Others:

  • 2 cups coconut milk
  • 3/4 cup brown sugar more if needed
  • 1/2 cup durian jam
  • pinch of salt

For the latik:

  • 4 cups coconut cream

Instructions

For the Sticky Rice:

  1. Cook the sticky rice according to the package instructions. I cooked mine in a rice cooker.
  2. Once the sticky rice is cooked, we can start preparing the Biko.
  3. In a pan over medium heat, add coconut milk, brown sugar, a pinch of salt, and durian jam.
  4. When the coconut milk starts boiling, add the cooked sticky rice and mix well.
  5. Continue mixing constantly until the liquid evaporates.
  6. You can taste and add more sugar if desired. Transfer to a greased container. I greased mine with coconut oil from the latik.

  7. Brush the top of the Biko with coconut oil from the latik.

  8. Top the Biko with latik.
  9. Enjoy!

For the Latik:

  1. Add coconut cream to a pan.
  2. Simmer over low to medium heat until coconut curds start to form.
  3. Separate the curds from the coconut oil, but reserve the coconut oil as well.

Recipe Notes

Well, if you don’t like adding durian jam but still wanna try this recipe, you can omit the durian jam and try vanilla extract instead.
