Low-Carb Chicken Patties

These Chicken Patties are Keto-friendly and perfect for those following a low-carb diet.

Years back, I told myself I’d never make anything Keto, but life has a funny way of proving us wrong.

A short story,

I had a colleague who was doing a Keto diet. At that time, I already did the Whole 30 program. We compared notes. I learned that potatoes and sweet potatoes are a BIG NO to the Keto diet. So, I told myself I’d never do it.

Present time – here I am sharing something Keto-friendly.

My BFF decided to follow a low-carb diet for health reasons, but she’s not strictly on a Keto/LC diet. She has cheat days, too! Because I am the cook, I feel it is my responsibility to bring a balanced meal to our table.

At home, we always use chicken breading with all-purpose flour. We never tried anything like healthy or low-carb breading because why would we?? We love our carbs!

I never thought low-carb breaded chicken could be delicious, too, until recently.

These chicken patties consist of ground chicken, powdered spices, and then coated with almond flour and parmesan cheese. They are juicy and tender on the inside and crispy on the outside. They’re so good that even the pickiest eater would love them.

Low-Carb Chicken Patties

The chicken patties are juicy and tender on the inside and crispy on the outside. They’re so good that even the pickiest eater would love them.

Ingredients

  • 450 g ground chicken
  • 2 tsp garlic paste (or 2 tsp garlic powder or 2 cloves garlic, minced)
  • 2 tsp onion powder
  • 4 tbsp spring onions (sliced)
  • 1 medium egg
  • 2 tbsp mayonnaise
  • 1/2 tsp ground black pepper
  • Pinch of salt
  • 1/2 cup almond flour
  • 1/4 cup parmesan cheese
  • cooking oil (I used extra light olive oil)

Instructions

  1. Place chicken, garlic paste, onion powder, spring onions, egg, salt, and pepper in a bowl. Mix very well. Add mayonnaise and mix again to combine. Note: The mixture is soft.

  2. Cover the bowl and keep it in the fridge for at least 30 minutes.

  3. In another bowl, mix almond flour and parmesan cheese.

  4. Get about 1/4 cup of the chicken mixture and carefully shape it into patties. Coat each with the flour-cheese mixture.

  5. Fry each in hot oil over medium heat until golden brown and the chicken is cooked through.

  6. Remove the cooked chicken patties and place them in a strainer to drain excess oil.

Recipe Notes

  • I grounded the chicken breast myself. Of course, you can use ground chicken from the grocery. I prefer fresh.
  • I used garlic paste, but you can use freshly minced garlic or garlic powder.
  • I used extra light olive oil to fry the patties.
  • It is best if your palms are wet while shaping the patties so it won’t stick to your palms.
