Tom Yum Fried Rice

Tom Yum Fried Rice is something Tom Yum lovers will love.

Did you have a craving that like lasted for almost a month just because you can’t figure out what is it you really want??

I had this craving for something sour and it lasted for weeks, I think almost a month. At first, I thought a simple Filipino sour soup would satisfy the cravings so I made Sinigang na Bangus. It is a dish with bangus (milkfish) cooked in tamarind soup. The soup was yum but did not satisfy the craving.

And since I bought 2 medium-sized bangus, I also made Paksiw na Bangus. It is (again) bangus cooked in vinegar (and others). Along with this, I served it with Marinated Daing na Bangus (bangus marinated in vinegar, salt and garlic, then fried later on). Of course, both dishes were enjoyed with rice. The meal was amazing – my vinegar-loving heart was completely overjoyed. However, the satisfaction only lasted overnight.

That, my friends, happened in 2 consecutive weekends.

The third weekend – I made sweet & sour chicken popcorn. I told myself, “Yes, this is it!”. Or maybe not! The thing is, I overdid the sour flavor. It was yum, but the dish was more like sour & sour rather sweet & sour.  If you are wondering, the dish did not go to waste. I managed to finish it.

The following weekend, I was in the grocery and saw a Tom Yum paste. And at that moment, I knew that something with Tom Yum paste is the FINAL answer – Tom Yum Fried Rice was the first choice.

If you know me well, you know how much I love fried rice because it is an all-in-one meal. You’ll have the rice, veggies and any meat of your choice.  And it is very easy to prepare.

Ahhh! Could you imagine that feeling of satisfaction and happiness when I tasted it? It is savoury, sour, little bit sweet & spicy.  This is something I’d like to include in my monthly menu.

Tom Yum Fried Rice

It is savoury, sour, little bit sweet & spicy. This is something a tom yum lover should try!

Ingredients

  • Cooking oil
  • 8-10 shrimps cleaned & deveined
  • 4 cloves garlic chopped
  • 3 spring onions sliced
  • 2 cups one-day old rice
  • 2-3 tbsp tom yum paste
  • ½ tsp chili paste
  • 1 cup sliced bok choi
  • 1 tomato sliced & seeds removed
  • Salt to taste
  • Fried eggs to serve

Instructions

  1. Add oil to pan over medium-high heat. When the oil is hot enough, add shrimps and cook for 1-2 minutes on both sides or until they turn orange. Remove the shrimps from the pan and set aside once cooked.

  2. Using the same pan, add more oil if necessary. Add garlic and cook until fragrant. Next, add sliced spring onions and cook for a few seconds.

  3. Add rice to the pan and mix until the rice is warm. Take about 2-3 tbsp of tom yum paste and 1-2 tsp of chili paste then add them to the rice. Mix until even in color. You can do a taste test and add more tom yum paste and chili paste if necessary.

  4. Season with salt. Add bok choi and tomatoes. Mix until bok choi is wilted.

  5. Return the shrimps to the pan and mix again.

  6. Time to serve with crispy fried eggs.

Recipe Notes

  • You can adjust the amount of tom yum paste because each brand has different level of spiciness or sourness.
  • I used a Thai brand of chili paste – it is sweet and little bit spicy. Adding this is optional.
