Salted Egg Noodles
I had a craving for anything salted egg and instant fried noodles, so I thought I would make Salted Egg Noodles.
Ahhh! Cravings, cravings! I think everything I’ve been eating for the last few months were all because of cravings. Last week, my craving was anything with salted egg – salted egg custard bun, salted egg fish skin, salted egg with Filipino eggplant salad… The only thing I got was salted egg fish skin. And the instant fried noodles craving kicks in, too. So yeah, Salted Egg Noodles is the answer.
In this very simple dish, you will need a pack of instant fried noodles. I used Indomie Mi Goreng coz it’s my favorite. You will also need ingredients for the salted egg “sauce”. I was planning to discard the seasoning packet, but I changed my mind. But you can stick on using the salted egg sauce alone and discard the seasoning packet. I will try that soon, too, and update this post.
In the meantime, here’s my first version of Salted Egg Noodles. Well, first because I may try another version in the future. We’ll see….
I really love how this turned out – buttery, garlicky, and so tasty! I’m looking forward to making my own salted eggs so I can make this again. So good!!
NOTES ON SALTED EGG NOODLES:
- I used Indomie Mi Goreng but you can use any instant fried noodles.
- You can discard the seasonings from the packet and just use the salted egg sauce.
- I topped the noodles with salted egg fish skin, but that’s optional.

Salted Egg Noodles
Ingredients
- 1 pack of instant fried noodles (I used Indomie Mi Goreng)
- 1-2 tbsp butter
- 2 cloves garlic chopped
- 4 curry leaves optional
- 1 red chili (sliced and deseeded), optional
- 2 salted egg yolks mashed or crushed
- 1 tbsp sweet soy sauce optional
Instructions

Cook the noodles according to package instructions, and then set aside. Keep the instant noodles seasonings for the sauce.

Meanwhile, melt butter in a pan over medium heat. Add chopped garlic and cook until fragrant.

If using, add curry leaves and chili slices at this point and give a quick stir.

Add mashed salted egg yolks, sweet soy sauce (if using), and instant fried noodles seasonings. Mix until frothy.

Now, add the cooked noodles (drained, of course) and give it a good mix until noodles are well-coated.

Serve immediately.

Are these hardboiled salted eggs or raw?

I used salted egg yolks from hardboiled salted eggs (the raw eggs, either chicken or duck eggs, were brined for 21-23 days, then hardboiled).
