Roasted Garlic Hummus

If there’s one Middle Eastern dip I could eat daily, it would be hummus, especially when it’s with roasted garlic.

Hummus is one of the first Middle Eastern foods I tried when I came to UAE, but I didn’t like it at first. It came to the point that I shake my head when somebody offers hummus. I know it’s a little rude to say “no”, but I really can’t.

And then this colleague of mine came to my life. She literally “forced” me to eat anything she brings. Well, not in a bad way. She loves bringing foods – Egyptian food mostly (she’s Egyptian). I would ask “What is this?” whenever she brings foods. But she would always answer me “just eat it”. And being obedient as I am (it’s the Libra in me – difficult for me to say “no”), I ate everything she brought.

Surprisingly, I started to like hummus and then I got obsessed with it along with the food she brought. She even told me, “You like everything now more than me.”

Whenever I see hummus, it’s like the hummus is calling my name every single time. Most of the time, I couldn’t resist.

I love hummus but I am not always in the mood to make one. And yes, 99% of the time, I get it ready from the grocery or from the cafeterias here. Why? Because the one I always buy is similar to the one I make at home.

I’ve been craving hummus for a while and also been seeing oven roasted garlic on TikTok so I thought why not make Roasted Garlic Hummus? But instead of using the oven, I used the air-fryer (so lazy to remove all the pans from the oven, lol).

I enjoyed every bit of this hummus – with air fried tortilla chips, with pita bread and with vegetables.

NOTES ON ROASTED GARLIC HUMMUS:

  • You don’t have to remove the chickpea skin but it makes the texture of the hummus better.
  • It is better to keep the hummus in the fridge to firm up more and to develop more flavor.
  • Always adjust the seasoning according to your taste.

Roasted Garlic Hummus

Loving this hummus with roasted garlic! I could eat this every single day!

Ingredients

For the roasted garlic:

  • 2 bulbs garlic
  • 2 tbsp olive oil

For the hummus:

  • 1 can chickpeas drain & reserve liquid
  • Garlic cloves from 2 bulbs of roasted garlic
  • 1/3 cup tahini
  • 2 tbsp lemon juice
  • 1 tbsp olive oil
  • Salt to taste

Instructions

For the roasted garlic:

  1. Slice the top part of 2 garlic bulbs. Wrap each in aluminum foil (I used 2 sheets of aluminum foil, on top of each other, for each garlic bulb) and then drizzle olive oil on top of each garlic bulb (1 tbsp for each). Wrap tightly and put in the air fryer basket. Air fry for 20-25 minutes at 190 C. Let it cool down for about 10 minutes before unwrapping. When the garlic has cooled down a little and safe to hold, squeeze out the garlic cloves by pressing the bottom part of the garlic. (See video for reference)

For the hummus:

  1. Separate the chickpeas and its water. Reserve the chickpeas water for later.
  2. In a heatproof bowl, add the chickpeas without its water. Add water and rub the chickpeas in between your palms until the skins are removed. Maybe not all skins will be removed and that’s okay. Pour out the water including the skins. Repeat this process is necessary. If you are satisfied, wash the chickpeas for the last time and drain.
  3. Put back the reserved chickpeas water. Microwave for 4-5 minutes. Let cool completely.
  4. In a food processor or blender, add in the microwaved chickpeas along with the rest of the ingredients EXCEPT olive oil. Turn on the food processor and while it is running, slowly add olive oil. Pulse again until hummus is smooth.
  5. Transfer to a container and let it firm up a bit in the fridge and also to develop more flavor.
  6. To serve, drizzle with more olive oil and add toppings of choice. Serve with pita bread, your favorite crackers or use as a spread.

Recipe Notes
