Binagoongang Talong at Sitaw

Binagoongang Talong at Sitaw translates to Eggplant and String Beans in Shrimp Paste.

As a child, my Mom used to tell me not to eat anything with shrimp paste especially the ones sold in our school and wet markets. However, as a little rebel (sorry, mom!), I still enjoyed it especially with green mangoes and jimaca. Since we didn’t have this as a kitchen staple, I never really “discovered” that there are many ways to enjoy shrimp paste until I worked and lived abroad.

Up to now, I cannot remember if I tasted a shrimp paste that I didn’t like, but there is something I really love – the ones I got from my hometown.

This one, I could literally eat it on a daily basis. It is more on a sweeter side that on the salty side, which I love. I’ve been on a shrimp paste kick lately – there are so many things I’d like to eat with it just like these Salted Chicken Eggs, but let me start with Binagoongang Talong at Sitaw.

I love that this dish is so easy and quick to make, yet so flavorful. It is best with warm rice. This can be enjoyed with steamed okra and fried fish, too; whatever you fancy.

Binagoongang Talong at Sitaw

I love that this dish is so easy and quick to make, yet so flavorful. It is best with warm rice. This can be enjoyed with steamed okra and fried fish.

Ingredients

  • Cooking oil
  • 2-3 long eggplants sliced
  • 3 cloves garlic chopped
  • 1 onion sliced
  • 1 to mato sliced
  • 1-2 tbsp shrimp paste
  • 10 string beans sliced
  • Salt & pepper to taste
  • Warm white rice to serve
  • Fried fish to serve (optional)
  • Steamed okra to serve (optional)

Instructions

  1. Add cooking oil to a pot with medium-high heat.
  2. Fry eggplants on all sides. Remove from the pan once cooked and set aside.
  3. On the same pan, add chopped garlic; cook until fragrant.
  4. Add onion & tomato; cook until soft.
  5. Next, add shrimp paste and string beans. Cook for about 2 minutes. If necessary, you can add little water at this point cook the string beans. I didn’t have to.
  6. Add fried eggplants and stir for few seconds.
  7. Season with salt & pepper, to taste.

Recipe Notes

  • Other than eggplants and string beans, you can add more veggies if you like.
  • This recipe is just a guide, you can add/remove ingredients.
