Stir-fried Veggies with Tofu
Not really a vegan or vegetarian dish, but this Stir-fried Veggies with Tofu is perfect for #MeatlessMonday.
I haven’t been eating a lot of meat lately. At first, I thought it would be difficult for me as I really love meat especially chicken meat, and also canned goods like corned beef and luncheon meat. I decided to cut back on meat back in August this year. If I can remember it correctly, I had meals with meat twice during that month. It was nice having meatless meals so I decided to continue, and just to eat meat occasionally.
And because I missed eating this Chicken Livers with Leftover Veggies, I made a version of it with fried tofu. It is equally delicious as the one with chicken livers, but meatless.
HOW DID I ENJOY THIS STIR-FRIED VEGGIES WITH TOFU?
Of course, this is perfect with rice. I had mine with brown rice. Yum! You can also enjoy this with cauli rice if you want a low-carb meal. This dish is also good with quinoa.
NOTES:
- Fry the tofu cubes as per your preference. You can fry them in a hot oil. I fried them using an air fryer. I also did not coat the tofu cubes with cornstarch and fried them as is.
- I used veggie stock powder because that’s what I had. You can use chicken cube or vegetable cube.
- You can use whatever available veggies you have.

Stir-fried Veggies with Tofu
Ingredients
- 300 g tofu, cut into cubes (see notes)
- Cooking oil
- 3 cloves garlic chopped
- 1 onion sliced
- 1/3 cup red bell pepper
- 1 cup sliced chayote
- 1 carrot sliced
- ¼ cup sliced long beans
- ¼ cup sliced cabbage
- ¼ cup oyster sauce
- ¼ cup soy sauce
- ¼ cup water
- 1 tsp vegetable stock powder see notes
- Ground black pepper to taste
Instructions

Fry the tofu cubes as per your preference. You can fry them in a hot oil. I fried them using an air fryer. When done frying, drain and set aside. Note: I did not coat the tofu cubes with cornstarch. I fried them as is.

In a pan over medium-high heat, add oil. When the oil is hot enough, add garlic and cook until fragrant. Add onion and bell pepper, cook until soft.

Add sliced chayote, carrot, soy sauce, oyster sauce, water and veggie stock powder. Stir and then cover the pan for 7 minutes or until the veggies are cooked.

If the chayote and carrot are cooked, add sliced cabbage and long beans. Cook for another minute.

Add the fried tofu cubes and mix everything.

Season with ground black pepper (and salt, if needed).

Turn off the heat and serve.

Jhuls hello, hope you are well!? How yummy! I’ve no idea what chayote is, but I’m guessing I could sub courgette. Then oyster sauce I’ll switch out for vegan worcestershire sauce and it is a vegan dish! Thanks for sharing at Fiesta Friday!
