Homemade Granola
I’ve made many things lately that I am so happy about, just like this Homemade Granola.
I never had granola except for the testers from the grocery. It tasted fine for me, but a little sweet. I don’t know, maybe I am not just the type of person who is or will be fond of eating granola.
Then why the change of mind, you ask? Well, I was looking for something that I could put on top of this overnight oats aside from fresh fruits. That’s the time I thought granola may be nice.
I was surprised by how easy it was to make granola and most of the ingredients were available at home.
HOW DID I ENJOY THIS HOMEMADE GRANOLA?
I have just started loving granola so I haven’t tried a lot of meals. So far, I enjoyed this homemade granola as is, with coconut almond milk, and as oatmeal and smoothie bowl toppings.
If you have more ideas on how to enjoy homemade granola, I would love to know.
To make granola, you only need few ingredients – rolled oats, nuts, oil, sweetener, cinnamon and vanilla. Then you can add anything you think that would be perfect to mix with granola. In this recipe, I used rolled oats, walnuts (you can use any nuts you prefer), maple syrup (or honey), coconut oil, vanilla extract, salt, chopped dark chocolate, raisins and toasted coconut.
NOTES:
- You can add more dried fruits or nuts.
- Keep in an airtight container.

Homemade Granola
Ingredients
- 2 cups (185 g) rolled oats
- ½ cup (58 g) chopped walnuts
- ½ tsp cinnamon powder
- ¼ cup (60 ml) coconut oil
- 3 tbsp (45 ml) maple syrup or honey
- 1 tsp vanilla extract
- ¼ tsp salt
- ¼ cup toasted coconut chips
- ¼ cup raisins
- ¼ cup chopped dark chocolate
Instructions

Preheat the oven to 350 F.

In a bowl, add the first seven ingredients. Give it a good mix and transfer to a parchment-lined baking sheet.

Bake for 25-30 minutes (or until toasted), stirring halfway through.

When done, remove from the oven and cool down completely.

Once the granola has cooled down, add the coconut chips, raisins and chopped dark chocolate. Give it a last mix and transfer to an airtight container.

Enjoy the homemade granola with overnight oats, yogurt, acai bowl, or eat as is.

So, you had me at those coconut chips – I buy bags of them at my local Trader Joe’s and pop them as snacks. Now it appears there’s something delish to use them in! This granola will do wonders for my yogurt breaks 🙂
