Dynamite Tofu

I’ve been dreaming about tofu lately and this Dynamite Tofu is one of the best answers to tofu cravings.

Dynamite Tofu is one of the best alternatives to Dynamite Shrimps just in case you are allergic to shrimps. This is equally delicious to the Dynamite Shrimps I made before. It’s basically crispy fried tofu cubes that are coated with a sauce called dynamite sauce. My version of dynamite sauce is made of mayo, Sriracha and honey. You can also add ground cayenne pepper, too.

Personally, I don’t like frying in general. However, I don’t mind frying tofu until it’s crispy when I know it will be coated with an amazing sauce like dynamite sauce or this sisig sauce.

HOW TO MAKE DYNAMITE TOFU?

In my version, I coated the tofu cubes with a mixture of cornstarch, garlic powder, onion powder, salt, and ground black pepper. After coating, I fried the tofu cubes in hot oil until crispy, removed from the pan and drained the excess oil. I coated the crispy tofu cubes with dynamite sauce.

The Dynamite Tofu turned out amazing – crispy, mildy spicy, addicting.  It’s perfect with rice or to eat as is. I couldn’t wait to make it again.

Ingredients

  • 349 g firm tofu cut into cubes
  • 1 ½ cup cornstarch
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1 tsp salt
  • 1 tsp ground black pepper
  • ¾ cup mayonnaise
  • 3-4 tbsp Sriracha see notes
  • 1 tbsp honey

Instructions

  1. While coating the tofu cubes: In a pan over medium-high heat, add cooking oil (about 1 inch deep).

  2. In a bowl, mix cornstarch, onion powder, garlic powder, salt, and ground black pepper.
  3. Prepare a plate dusted with cornstarch.

  4. Generously coat each tofu cubes with seasoned cornstarch and transfer them to a plate or shallow bowl dusted with cornstarch. Then, dust the coated tofu cubes again with cornstarch. The point is, they should be well coated.

  5. When the oil is hot enough, fry the coated tofu cubes until golden brown. Put the fried tofu cubes in a strainer to drain excess oil. Remove the oil from the pan (reserve it to use later if you like).
  6. The frying takes time so let’s prepare the sauce/coating: In a small bowl, mix mayonnaise, sriracha, honey, and cayenne pepper (if using). Do a taste test and adjust accordingly. Cover and keep this in the fridge until ready to use.

  7. Place the fried tofu cubes in a bowl and coat them with the dynamite sauce.

Recipe Notes

  • Instead of using only Sriracha, you use Sriracha and ground cayenne pepper.
  • After coating the tofu cubes with cornstarch, you will notice that the coating somehow becomes slightly “wet”. This is the cornstarch absorbing the moisture from the tofu. You have to make sure that the coated tofu cubes are placed on bed of cornstarch and dust them again with cornstarch. You may notice that when you place the coated tofu cubes on a plate without cornstarch, the coating at the bottom will stick to the plate when you lift the tofu cubes. Got me?
  • The tofu cubes should be well coated before frying.
