Quinoa “Fried Rice”
Have you tried Quinoa “Fried Rice”?
Quinoa “Fried Rice” is one way to enjoy quinoa. I love that it can be a one-pan meal. It is filling and satisfying. I made this several times already and I’ve always loved it.
I make this dish when I am trying to avoid rice as rice doesn’t make me feel full quickly like quinoa does.
WHAT’S IN MY QUINOA “FRIED RICE”?
If you know me well, you know that I have mixed veggies, spring onions and egg in my fried rice dishes. In this dish though, I added peanuts for some crunch. You can use other nuts, too. Sometimes, I also add baby spinach. It just happened that I didn’t have available spinach when I made this. But it’s a good addition for added nutrients. Other greens would be good, too, like kale.
This fried rice is good on its own because you have veggies and eggs in it, but I also love eating this with chicken nuggets or breaded chicken. You can also pair this with a main dish like this Bistek Tagalog.

NOTES:
- You can use any mixture of veggies you like that you think goes well with fried rice.
- Adding peanuts is optional.

Quinoa “Fried Rice”
This is one way to enjoy quinoa. I love that it can be a one-pan meal. It is filling and satisfying. This fried rice is good on its own because you have veggies and eggs in it, but I also love eating this with chicken nuggets or breaded chicken.
Ingredients
- Cooking oil
- 2 beaten eggs
- ½ cup chopped carrots
- ½ cup frozen green peas
- ½ cup drained kernel corn
- ½ tbsp minced garlic
- 2 cups cooked quinoa
- Salt to taste
- Spring onions
- Fried peanuts optional
Instructions

In a pan over medium-high heat, add cooking oil. When the oil is hot enough, add beaten eggs. Cook the eggs as per your liking. Remove from the pan, transfer to a plate and set aside.

Add more oil to the same pan. Add chopped carrots and frozen green peas, and cook for 2 minutes. Add minced garlic, cook for about 1 minute. Add kernel corn and quinoa. Mix until quinoa is warm.

Season with salt and add the spring onions.

Transfer the quinoa “fried rice” on a plate and top with the egg and peanuts (if using).

I think I must be missing something about quinoa, it doesn’t have much flavor in my book. But this looks like a great way to solve that problem.

I am not a huge fan of quinoa alone, but I love it when it’s cooked like “fried rice”.
