Ginisang Sardinas na may Sayote or Sautéed Sardines with Chayote is one of the dishes I’d like to prepare when in a rush.

Did you notice that I’ve been sharing quick recipes lately? That is because life has been really busy. I am torn between having a good, comforting meal after a long day or going to bed early.  Some people would choose sleep over food, but not me. Well, at least NOT YET. When this happens, it’s either I make instant food like this or order food online. However, there are times that you get fed up of having the usual instant foods you’re having and foods online (burgers, pizza, pasta – yum). Oppps! I didn’t say that’s what I am feeling; maybe somebody else is feeling that way. No, not me.

WHAT IS GINISANG SARDINAS NA MAY SAYOTE?

Anyway, this Ginisang Sardinas na may Sayote is simply sautéed sardines with chayote. I used canned sardines, so it is not totally healthy, is it? The additional veggies are. So, a balanced dish, maybe??

This dish is a good alternative to instant/fast foods when in a rush to prepare a meal. Yes, it doesn’t taste like a burger or pizza (sigh), but it is comforting to me and it makes my tummy happy. Of course, it is best served with rice.

Ginisang Sardinas na may Sayote

Ginisang Sardinas na may Sayote is simply sautéed sardines with chayote. I love it with garlic fried rice and with scrambled egg on the side.

Ingredients

  • Cooking oil
  • 4 cloves garlic chopped
  • 1 onion sliced
  • 1 tomato sliced
  • ¾ cup sliced sayote
  • 2 cans sardines in tomato sauce
  • Water
  • Misua (Chinese vermicelli) I used about 40 g
  • Spring onions sliced
  • Salt & pepper to taste

Instructions

  1. In a pan over medium-high heat, add cooking oil. Saute garlic until fragrant. Add onion and tomato; cook until soft.
  2. Add sliced sayote and water (enough to cook the sayote). Cover and let the sayote cook for 5-7 minutes (depending on the size of your sayote). You may need to check from time to time to make you have enough water to cook the sayote. Add enough water if needed.
  3. When the sayote is cooked, add the canned sardines. Lower the heat at this point. Add enough water to the empty canned sardines and pour it into the pan. Let this simmer for a few minues.
  4. Add misua and let simmer until misua is cooked. Add sliced pring onions. Season with salt & pepper.

Recipe Notes

  • You can add more veggies if you want like carrots, potatoes, zucchini or spinach.
  • I used 2 canned sardines in tomato sauce (1 spicy & 1 regular).
