Roasted Chicken and Sweet Potatoes with Cajun Seasoning is probably one of my favorite dishes to eat when trying to eat healthy meals.

Losing weight is on my New Year’s resolution this year, but that is not my first priority – eating a balanced diet is. If you know me very well, how know how much I love my sweets. And as Asian, I do eat a lot of rice.

I’ve tried going back to the Whole30 program, but it seems very difficult now. I don’t know – maybe I am more concerned with having a content/recipe to share than losing weight. And if I am being honest, not having sweets these days makes me really sad.

Since I cannot (or I don’t want to?) complete the Whole30 program and I refuse to do the Keto diet, I am focusing on having a balanced diet. I don’t know if there is a right way to do a balanced diet, but I hope I am still doing it right. You know, I eat both healthy and naughty foods.

Anyway, back to the Roasted Chicken and Sweet Potatoes with Cajun Seasoning…

Making this dish is super easy. If you are using a store-bought Cajun seasoning, then you don’t have to worry about making your own Cajun seasoning. I’ve been making my own Cajun seasoning, and honestly, I haven’t tried the store-bought ones. Do you have a favorite brand in case I want to try it as well?

I’ve been making this Cajun seasoning for almost five years now and it’s is just amazing! To make this dish, you just have to mix all the ingredients and bake. You can also marinate in the fridge overnight, but it is not really necessary.

I love everything about this dish – it so tasty, smells really good, and healthy, too. When planning to eat healthy, this is always the top one on the list. And oh, I love this WHOLE30 EGG AND POTATO SALAD, too.

Roasted Chicken and Sweet Potatoes with Cajun Seasoning

Roasted Chicken and Sweet Potatoes with Cajun Seasoning is probably one of my favorite dishes to eat when trying to eat healthy meals. This is such a filling meal.

Ingredients

For the Cajun Seasoning:

  • 2 tbsp smoked paprika
  • 1 tsp dried oregano
  • 1 tsp dried thyme
  • 1 tsp ground black pepper
  • 1 tsp chili powder
  • 2 tsp garlic powder
  • 2 tsp onion powder
  • 2 tsp salt
  • ½ tsp chili flakes

Others:

  • 2 tbsp ghee or butter
  • 2 tbsp olive oil
  • 5 cloves garlic chopped
  • 300 g chicken cut into pieces
  • 150 g sweet potatoes cut into chunks (see notes)
  • Salt & pepper to taste

Instructions

For the Cajun Seasoning:

  1. Mix all ingredients in a small bowl. Set aside or store in an air-tight jar until ready to use.

Prepare the chicken and sweet potatoes for roasting:

  1. In another small bowl, add 2-3 tbsp of Cajun seasoning, olive oil, and ghee (or butter). Mix and set aside.
  2. Pat dry the chicken and place in a baking dish; season with salt & pepper. Add the sweet potato chunks, garlic cloves, plus the Cajun seasoning and oil mixture. Mix using your clean hand.
  3. If planning to marinate, you can cover the baking dish with cling film and marinate in the fridge for 2 hours up to overnight. However, you can skip the marinating part and roast in a preheated oven at 400 F for 45 minutes to 1 hour. You may need to watch the sweet potatoes as they may be overcooked.

Recipe Notes

  • You can use other veggies, but I really love sweet potatoes and Cajun seasoning together.
  • Butter can be used instead of ghee.
  • The duration for roasting the sweet potatoes may vary, depending on the freshness of the sweet potatoes. Some may be cooked at 25-minute mark, but some take longer to cook. You can check after 25 minutes if the sweet potatoes are tender. I love mine on the mushy side so I don’t mind if they’re overcooked.
  • Sweet potatoes can be left with skin or without. If leaving the skin on, make sure to wash properly.
