Creamy Filipino Chicken Adobo Pasta + Recipe Video
If you are not aware of Filipino Chicken Adobo, it is probably the most famous dish in the Philippines. Abodo is derived from the Spanish word “adobar” which means “marinade”. Not to be confused with Spanish adobo, a Filipino adobo dish is traditionally made with chicken, soy sauce, vinegar, garlic, black pepper and salt.

Chicken Adobo is one of the dishes I’ve made countless times. Although I always make it, I haven’t tried using the leftovers aside from Chicken Adobo Fried Rice because we rarely have leftovers to make a new dish. But when I have tried pasta with a creamy chicken adobo sauce, I had to cook more than I usually do just so I can try making my own version. I thought it was weird, but it’s not.
So what’s Creamy Filipino Chicken Adobo Pasta? It’s a pasta dish with shredded chicken from the chicken adobo + it’s sauce, evaporated milk and cream as the main ingredients. It’s a dish that’s so easy to make, unique but deliciously comforting. I love the addition of lemon juice with a bit peppery taste.
The secret to making the delicious pasta – the chicken adobo must be tasty. You can use your own chicken adobo recipe. I used the recipe of my Filipino Chicken Adobo in Calamansi.

Creamy Filipino Chicken Adobo Pasta
Ingredients
- 250 g pasta
- 1 tbsp oil
- 1 cup shredded chicken adobo
- 1-2 tbsp chicken adobo sauce
- 1 tbsp butter
- 1 bulb garlic chopped
- 500 ml (2 cups) all-purpose cream (or cooking cream)
- 60 ml (1/4 cup) evaporated milk
- 180 ml (3/4 cup) chicken adobo sauce
- 2 tbsp lemon juice
- Salt and pepper to taste
- Parmesan cheese grated
Instructions

Cook the pasta according to package instructions.
While the pasta is cooking:

In a pot over medium-high heat, add oil. Add shredded chicken and 1-2 tbsp adobo sauce. Cook until lightly toasted. Remove and transfer to a plate.

In the same pot, melt butter. Add garlic and cook until toasted. Remove ¾ of the garlic and transfer to a plate.

Put back ¾ of the chicken to the pot with the garlic.

Add all-purpose cream, evaporated milk and chicken adobo sauce. Bring to a simmer.

Turn off the heat and season your pasta with lemon juice, salt, and pepper. (You can even add chili flakes.)

Add the cooked pasta, mix and transfer to a serving plate.

Serve with the reserved shredded chicken, garlic and parmesan cheese. Squeeze more lemon juice, if desired.
Recipe Notes
You can also add garlic powder for more garlicky taste.
You can also add mushrooms, baby spinach, corn and whatever your tummy desires.

I LOVE chicken adobo! The school I used to work at hosts an International Food Fair every Fall and the Filipino booth always has amazing chicken adobo!!
