Gourmet Tuyo Pasta with Sundried Tomatoes
When it comes to pasta, I prefer the saucy ones and the ones with like a “million dollar” ingredients other than the ones with the simplest ingredients. I have tried a pasta dish with just olive oil and dill, and I loved it. I just don’t want to make it myself because it looks “sad” to me. If I make it myself, I am sure I’ll add a cream at the end… then it becomes another dish.

This dish can be put together in 15 minutes and that’s one of the things I love about it. Also, very few ingredients are needed – oil, butter, garlic, gourmet

Gourmet Tuyo Pasta with Sundried Tomatoes
Ingredients
- 200 g pasta I used fusilli
- 1 tbsp butter
- 2 cloves garlic minced
- ½ cup sundried tomatoes chopped
- 1 bottle gourmet tuyo drained but reserve the oil
- ¾ cup sweet kernel corn
- Salt & pepper to taste
- Lemon juice
Instructions

Cook the pasta according to package instructions.

In a skillet with medium-high heat, add 1 tbsp oil from the gourmet tuyo. Add butter and melt.

Add garlic and cook until fragrant being careful not to burn it.

Add gourmet tuyo, sundried tomatoes and stir for about a minute.

Add the pasta and corn. Stir and season with salt, pepper and lemon according to your taste.
Recipe Notes
You can, of course, adjust the amount of the ingredients according to your liking. You can also put any add-ins you like.

I think this is the first time I used lemon in pasta and it makes a huge difference. I am not sure if you’ll get the same result when you use anchovies. Thank you, Jenny. x

haha, I’ve read the comments above and I also had to Google tuyo I thought they looked like anchovies. I’ll have to see if I can source this ingredient and give this dish a go, I do so love these quick pasta dishes, so simple yet impressive looking and satisfying too.

most days I just love quick, easy and tasty recipes and this sounds delicious! I am the same with adding other ingredients and have almost given up following a recipe to a tee and I am more used to cook with ingredients I have at hand. Gosh this does look and sound good. I have been meaning to do a plain pasta dish,if you know what I mean, without the sauce. So will def try this beauty. I too love the lemon pasta thing. Lush.
