Stuffed Bell Pepper Soup (Filipino Style)
A Filipino style stuffed bell pepper soup??
Okay, before you leave or wonder how does a stuffed bell pepper soup becomes a Filipino style, please take a moment to listen… or not, but I hope you’ll stay for a little bit.
I was supposed to make the classic American style stuffed bell pepper soup, but there are so many variations. I know that I really don’t have to follow the written ingredients and add what I want, but I also don’t want to make something that’s far from the American style. I’ve been thinking what shall I use? Canned/boxed canned tomatoes? Fresh tomatoes + beef broth? There are also variations using marinara sauce (I think) and tomato sauce. I haven’t had stuffed bell pepper soup before. (What??? How many years have you been living under the rocks, Jhuls??) Yeah, I know! I had stuffed bell peppers before, but not the soup. Although I could imagine how the soup tastes, I still don’t want to risk mixing up ingredients.
Soooo, I went to the grocery and got the things I needed. I prepared everything and cooked as planned. After about 10 minutes of simmering the soup, the smell of the soup was so good I immediately wanted to dig in. However, the smell was similar to a Filipino dish. That’s the time I panicked. “Is the smell supposed to be like this?”, I asked myself. I checked the plastic bag where I threw the pouch and I found a Filipino style tomato sauce. How did that happen?? I took tomato sauce instead of canned chopped tomatoes?? Well, maybe because I was also thinking of making a pasta at the same time I was thinking of this stuffed bell pepper soup? It got mixed up. I was so upset, but when I tasted the soup, it was delish I wanted to dive into the soup.
The soup turned out really tasty and yummy!! The Filipino style tomato sauce made the dish a little sweeter, but not too much. Just a balance of sourness, sweetness and it is also a bit spicy. If I am not mistaken, in the traditional soup, you add a small amount of rice (more soup than rice). In this one, I enjoyed this with more rice – well, Filipino style, yes? We love rice so much. Of course, you can follow whatever you desire and will enjoy.

Stuffed Bell Pepper Soup (Filipino Style)
The stuffed bell pepper soup in Filipino style - a combination of sweet and (little) sour. It is one of the perfect comfort foods.
Ingredients
- Cooking oil
- Onion chopped
- Garlic chopped
- 1 cup red and firm tomatoes chopped
- 1/3 cup green bell pepper chopped
- 1/3 cup red bell pepper
- 250 g ground beef chopped
- 2 beef cubes
- 375 ml tomato sauce I used Filipino style tomato sauce
- 200 - 300 ml water
- 3 tbsp tomato paste
- 1 tsp sugar
- Salt and pepper to taste
- White rice to serve
- Lemon to drizzle
- Parsley for garnish
Instructions

In a pot over medium-high heat, add oil.

When oil is heated, add garlic and onions. Cook until fragrant.

Add tomatoes and bell peppers. Cook until veggies are soft.

Then ground beef and cook until no longer pink and water has mostly evaporated.

Add beef cubes (you may start from 1 cube and add more later on) and cook until dissolved. Add tomato paste, tomato sauce and water.

Simmer on low fire for about 30 minutes.

Add sugar, salt and pepper according to your taste.

Serve with white rice. Drizzle with lemon juice and top with parsley (if desired).

Ive not heard of stuffed pepper soup either but it looks good. What makes the tomato sauce Filipino style (i guess the flavourings but how might we recreate that)

Hi, Jacqui. It is more on ‘sautéed flavor’ and sweeter than the regular tomato sauce.

But what’s in Filipino tomato sauce that makes it different? And I don’t think you can get it here in the States; I’ve never seen it. Not even in Asian markets. Maybe you can suggest substitutes?

Hmm, the Filipino style tomato sauce has more of a ‘sautéed’ taste and slightly sweet. For the substitute, you can add more garlic and onion, sauté them until they are slightly caramelized and for the sweetness, you can add more sugar.
