Choco-Dates Energy Balls

If you are seeing this post, it means my “new” blog has gone live. It is not very different from the old one – just took the domain. 😀

I’ve thought about getting a domain name during my first year of blogging but set aside the thought after that. I didn’t know that getting a domain is like ‘owning’ your blog name and nobody can take it away from you (am I right??). Well, I am not saying that someone would take an interest in getting my blog name ‘The Not So Creative Cook’ coz it doesn’t sound really encouraging. You know what I mean??

Then a friend/sister whom I’ve met from Instagram (Malu from The Mommy is Cooking (@themommyiscooking) DM’d me about how she loves my blog and opened the topic of getting a domain name. I consulted my BFF and my other self (Jhuls 1 or Jhuls 2 (if you can still remember them) – whoever was active that time) and both agreed that it is time to get a domain name.

I did mostly everything all by myself – the process was not easy peasy. The craziest thing I have encountered was moving the content of my old blog to this one. I have not moved everything – maybe 90-95%. I still had fun, though. It was such an amazing feeling when everything was slowly coming together.

I’d like to thank everyone who supported me all these years and to my BFF who helped me with the header and “logo“. It may not look much but it feels different when you played a huge part.

On to the recipe post…

These energy balls have helped me retain my energy while doing all the stuff I need – amazing energy booster. These are no-bake, so you know that these are easy to make. These are full of healthy stuff, too, like nuts. I used walnut and cashews coz those were the ones I had. You can also use almonds and pistachio. You can use 1-3 tbsp (or more) cocoa powder. I like mine on the chocolatey side, so I used 3 tbsp and the taste is awesome for me. I used Medjool dates which are not too soft – I had to add water. Depending on the texture of your dates, you may or may not add water. These are super healthy and make a good snack. 😉

Choco-Dates Energy Balls

These are no-bake energy balls and make a good snack - yummy and healthy!

Ingredients

  • 210 g pitted & chopped dates
  • 35 g walnuts (or pistachio) roasted & chopped
  • 50 g cashews roasted & chopped
  • 3 tbsp desiccated coconut
  • 3 tbsp cocoa powder
  • 1 tbsp water (you may or may not need this)
  • Nuts (ground), cocoa powder and/or desiccated coconut, for coating
  • 1 tbsp chia seeds optional
  • 2 tbsp chopped dark chocolate I used 70% cocoa

Instructions

  1. In a food processor, add all ingredients except for the ingredients for coating and water. Pulse until combined. When you feel that the mixture comes together and can be formed into balls, then you don't have to add water. (This will be depending on the texture of your dates.) Otherwise, you have to add water. 

  2. When the mixture is ready, remove from the food processor and transfer into a bowl.

  3. Take about 1 1/2 tbsp of the mixture and form into balls.
  4. Roll the balls to your preferred coating.
  5. Keep the balls in the fridge inside an airtight container.
