
Sugar-glazed Donuts
Another meeting with the Yeast Beast…
My last meeting with the beast was the time when I made this Focaccia bread as an entry for FFC#1. We felt a little awkward being with each other as we have not seen each other for months after having arguments. We then decided to make peace and agreed to see each other often so we feel comfortable with each other every time we meet. Thus, I decided to revisit the first recipe where I used yeast – Homemade Glazed Donuts, hoping it will be better than the first meeting. But something went wrong…
My friend who was with me the first time I made these donuts (and who was the one who activated the yeast) was also with me the second time. We figured out to make the donuts again. This time, I activated the yeast myself… using a thermometer. Ha! Of course, I did! It’s wiser to use the thermometer considering that I am not an expert with the yeast. I mean, I know what’s warm and hot. But it’s better to use the thermometer. 😛 My friend must have been so proud of me when she saw the yeast activated beautifully. Then I told her ‘I used the thermometer!’, giving her my biggest grin. 😀 I decided to half the recipe so that means I should half the ingredients. I mixed all ingredients and noticed that the dough is a little wet. I felt there’s something wrong…
So while I watch my friend (Yes, she did it! She seemed to be enjoying it so I let her do it. Besides, we don’t get to bond like that always) was kneading the dough, *something’s really wrong* I knew what was wrong – I put two eggs instead of one and I used large eggs! So what do you get when you were supposed to use one large egg instead of two? Nonetheless, she proceeded with the kneading.
I know you’d love to know how it turned out, so I am bringing these to FF#19.

And tadaa… The result? The donuts were like Churros in donut form! 😀 They were deliciously crispy on the outside and airy inside. They were not as soft as the donuts you can find from famous donut shops but I just love the texture and they were amazingly delicious.
Of course, they were best when eaten the same day! I think I consumed more than my friend. 😀 I always do! I wonder what will happen if I used just one egg. Hmm… I will find that out because I will make these again. And I will make sure to make chocolate sauce this time!

Well Jhuls, I think these donuts turned out pretty amazingly well!! Those sugar graze looks so divine. Very tempting… extra egg must made those doughnuts rich and moist… yum yum yum.
If you are worried about yeast getting active, you can buy ‘quick dry yeast’ or ‘active dry yeast’ next time. You can just add them straight into the flour. It is also handy if you want to bake breads without adding any sugar. 🙂

Oh, sorry, not ‘active dry yeast’. You can check the tin/pack of the yeast you have, and if they have instruction about activation, it will need activation. But usually, if it say, ‘easy’, ‘instant’ ‘fast action’ etc, they don’t need activation. Sorry for confusing you.

hey there Jhuls so are the donuts above the ones where you mixed the dough wrong but still turned out great? Or a different recipe altogether?? My humble opinion on yeast – I usually use the stuff in the sachet – dry pellets – I then throw those into the flour and all other ingredients, I may or may not warm the fluid to baby bath temperature ( ie you can stick a finger in and its warm and doesnt burn your finger) not that I do that, then I knead the dought (using the bread machine, which has a heating function and therefore helps the dough to rise – yeast is easy to work with just dont over think it and treat it likethe living thing it is 🙂 made me laugh your post!

I halved the recipe when I made these donuts. I halved all ingredients expect the egg – so I had an extra egg here. 😀 And I always knead by hand. 🙂 Thank you so much for stopping by and I may have to try that addition of yeast to flour. Do I have to change the rising time??

Hi Jhuls – I guess I am a lazy cook 🙂 – I really just add the yeast to the flour – one should stir at this point, then add the salt, sugar if any mix and then the wet ingredients make a dough and let the dough rise. I dont ever watch rising times just watch the dough to see when it has risen happily and is double its size, the dough wil tell you when its ready 🙂 not very scientific approach maybe and depending on where you are and the temperature it will take longer, you can even put the dough in the fridge and let i rise overnight, but then in the morning you must bring it to room temperature, knead again, and let rise before you bake 🙂 – does this help or leave you more confused?

well then to make it simple – throw the active yeast in with the flour mix all dry ingredients – have butter and milk at room temperature – or at least ideally not fridge cold – mix it all together into a nice dough – let rise about 1 1/2 hours – when you poke a finger into it should feel like a soft memory foam cushion 🙂 there easy!

you can do either, but I am lazy so throw it all together, maybe the end result would be amazingly different if one went the long step process, but over all it is satisfactory if you throw it all together 🙂
Active Dry Yeast can be added directly to dry ingredients:
Use liquid temperatures of 120°F-130°F.
Yeast activity may decrease if it comes into direct contact with salt or sugar.
Active Dry Yeast can be dissolved in liquids before using:
Rehydrating Dry Yeast before using gives it a “good start” – the yeast feeds on the sugar allowing it to become very active and ready to work in your dough.
Water is recommended for dissolving yeast.
Dissolve 1 tsp sugar in 1/2 cup 110°F-115°F water.
Add up to 3 packets of yeast, depending on your recipe, to the sugar solution.
Stir in yeast until completely dissolved.
Let mixture stand until yeast begins to foam vigorously (5 – 10 minutes).
Add mixture to remaining ingredients.
Remember to decrease the total liquids in your recipe by 1/2 cup to adjust for the liquid used to dissolve the yeast.

I am trying to experiment with a reflector, Lori. But even though I use a reflector, some of the photos are just same as the old ones. I can’t seem to figure out how to use the camera except to point and shoot. I still don’t know what time is perfect to shoot stuffs. I am trying every printed background I have to match with the food. I transferred the table near the window so I don’t have to put so much effort in setting up. I don’t edit food photos except adding texts. The main problem I have is I am so poor in food styling/decorations! But it doesn’t matter, the taste of the food is better. Thank you, Lori! <3
