UPDATED: Dynamite Shrimps
If you have been with me during my first few years of blogging, you may remember me posting a recipe for Dynamite Shrimps. Well, I’ve updated that recipe and I have it here. There’s nothing wrong with the old one, but I just want to make it more delicious for you and for me. 😀
Dynamite Shrimps is one of the dishes that I don’t think I’ll ever get tired of eating. I could really eat these scrumptious shrimps everyday. The problem comes in when it’s time to remove its shells and all the cleaning job I have to do. Yes, I can buy the ready to be cooked shrimps or I can ask somebody to do the cleaning stuff for me, but I prefer doing them myself. So yeah, I ended up doing the things I don’t like much when it comes to shrimps.
Enough with the cleaning stuff and let’s talk about these INSANELY DELICIOUS Dynamite Shrimps.
To those who are not aware, Dynamite Shrimps are basically fried shrimps that are coated with a sauce called dynamite sauce. My version of dynamite sauce is made of mayo, Sriracha and honey. In my version, the fried shrimps are coated with a wet batter and then coated with a dry mixture. Of course, you can adjust the batter and coating for your shrimps. The star here is the dynamite sauce.
Since it is called Dynamite Shrimps, for me, the sauce should be spicy. But again, you can adjust it according to your taste.
TIPS:
- These are perfect if consumed immediately.
- If not planning to consume immediately, do not mix the shrimps and the sauce – only mix them just before serving. Although, I must say that the shrimps might not be as perfect as when it was cooked the first time.
- Make sure to do a taste test before mixing the sauce with the shrimps.
- If you have leftovers, you may use them in sandwich or tortilla wraps – I’ve tried Dynamite Shrimps Tortilla Wrap and OMG it was amazingly good!
- You may finish the whole thing by yourself, have somebody with you or NOT. 😛

Dynamite Shrimps
Insanely delicious fried shrimps with dynamite sauce – it’s addicting!
Ingredients
- 500 g medium-large shrimps shelled and deveined
- Vegetable oil or any cooking oil
- Lettuce optional, to serve
For the Dynamite Sauce:
- ¾ cup mayonnaise
- 4-6 tbsp Sriracha you may add more if you like
- 1 tbsp honey
For the batter:
- 1/4 cup all-purpose flour
- 1/4 cup cornstarch
- 1 egg beaten
- ½ tsp salt
- ½ tsp pepper
- ½ cup very cold water
For the coating:
- ½ cup all-purpose flour
- ½ cup cornstarch
- 1 tsp salt
- 1 tsp pepper
- 1 tsp garlic powder
- 1 tsp onion powder
Instructions

Mix the sauce and do a taste test. If the taste is fine with you, you can set the sauce aside in the fridge. If not, you can make adjustments.

Prepare the batter: Mix the ingredients for the batter. Add in shrimp and mix well to coat.

Heat at least 1 inch oil in a deep pan in a medium heat and wait for it to be hot enough.

Prepare the shrimps: In a bowl, mix the ingredients for the coating. Working in batches (if necessary), remove shrimps from the batter and transfer to the bowl with the coating mixture and make sure to coat the battered shrimps well. When shrimps are well coated, remove from the coating mixture and set aside. Repeat until all shrimps are coated.

When oil is hot enough (about 350°F), fry shrimp in batches for 2 minutes (or until golden brown) and transfer to a stack of paper towels (or strainer) to remove excess oil.

When all shrimps have been cooked, carefully mix the shrimp and the sauce.

Make sure to consume the dynamite shrimps immediately.

Yummy! These shrimp are making my mouth water! I’m with you, shelling them is a total pain. We buy them in kilo bags from the freezer at our local fish market and they are already shelled which is wonderful! They’re lovely big plump Vietnamese prawns usually. Can be expensive for the whole bag but then we get 5 or 6 meals out of one bag so it can be quite cost effective. Maybe you can get them like this in your area too? I always keep a bag in the freezer because they’re great in a quick curry or fried rice when I’m feeling lazy 🙂

I can find frozen shrimps, but I think they are pre-cooked or something. I’ve always wanted to make this again, but shelling is the only thing that hinders me. Maybe my solution is to ask the seafood section people to shell them for me. 😀 Thanks, Lis.

Oh such a shame your frozen prawns are pre-cooked. Ours are raw and so handy. Great idea to ask the fish man to shell them! Takes care of all the messy rubbish too 🙂
